Previously known as Gilgamesh. Continuing our adventure into the realm of sour ale brewing, we designed a recipe to create an Upland version of a traditional Flanders Red. Melding flaked maize into a turbid mash and adding Belgian candi sugar during a long kettle boil, we prepared this ale for epic proportions. We then incorporated wild yeasts and other acetic and lactic acid producing microorganisms for a year-long oak fermentation in bourbon barrels, which had previously been utilized to age beer. The journey was worth the hardships.

HMOG 2015. This one won the most sour beer of the day for me. Whoa. Murky brown/mahogany. Big tart aged cherries, vinegar, bit funky.

Bottle: Swampy, murky copper & burnt amber, fading khaki head turns quickly to a foam. Aroma of cherry, balsamic vinegar, cinnamon spice, acetone, & lactic acid. Flavor is heavy acetone, white wine vinegar, wood, acidic lemon, perfume, & modest cheesy funk. Kind of heavy on the senses.

Refrigerated 75 cl brown bottle corked and capped from queenholly poured into a tulip. Dark red with small/medium with small/medium beige head. Aroma is tart cherries, medium body, well/medium carbonation, and little lacing. Taste is dark candy sugar, tart, some subdued cherries, some vinegar, and some bourbon. I prefer most of the other Uplands selections I have had.

Ugh. Bourbon and upland. Brown sugar, leather, grape juice and painful acetic acid. The bourbon is offensive on this "epic" flander. Pickles buttered popcorn. No go.

Bottle; Pour is murky brown, with a hint of amber into this snifter - The head is fine bubbled khaki, with two fingered head that retains fairly well here. The nose is deep cellar, caramel and brown sugar, moving to feint earthen oak presence. Itís a touch jarring, frankly. Thankfully, the flavor profile is more appealing by my estimation. It is initial light tart, with some acetic presence, moving to dark cherry notes, moving to oak tannins. Some lactic notes come through, with lingering spice and caramel toffee notes. Bourbon presence is meek at best - but I suppose thatís alright - Anyway - itís a nice attempt.

750mL bottle pours a murky dark brown with a small sparse bubbly khaki head. Fairly large oak and bourbon presence in aroma, sour lactic, raisin and caramel. The flavors of the sweet oaky bourbon work really well with the tart and sourness, caramel and brown sugar with light corn in the finish. Pretty interesting stuff!

Bottle from a recent tasting. Thanks for splitting. Listed as Gilgamesh. A: Brown coloration with a creme colored head. Lacing. N: Acetone, vinegar, grapefruit, lemon zest, and a hint of cocoa and maybe coffee, leather, and tobacco, as befits a blacker sour. T: Tart. Somewhat sweet. M: Medium body, medium carbonation, no alcohol. O: This works pretty well for a dark sour - which I tend to find have too many factitious sides. This one works pretty well, emphasizing the tart over the bittersweet elements.

Bottle during upland share. Dark brune pour with tan bubbles. Very tart fruit aromas. Regular sour red tones, sour tones.
