Previously known as Gilgamesh. Continuing our adventure into the realm of sour ale brewing, we designed a recipe to create an Upland version of a traditional Flanders Red. Melding flaked maize into a turbid mash and adding Belgian candi sugar during a long kettle boil, we prepared this ale for epic proportions. We then incorporated wild yeasts and other acetic and lactic acid producing microorganisms for a year-long oak fermentation in bourbon barrels, which had previously been utilized to age beer. The journey was worth the hardships.

Figured it was time to pop the cork. This was a bitch to open - required the lobster claw cracker to pull the cork - but it cam with a loud pop. Pours a brown ale with cherry hues and a good broken sheet of light cream foam. Smells of sweet balsamics, some brown sugar and some oak. There is the vinegar tone, indicating the tart quality, but the nose lacks depth for me. Flavor has a nice tartness, cherries, oak, hint of bourbon, slightly bitter, and a hint of sweetness. I like the balance in this one. Medium bodied with lower carb and a dry finish. Nice beer, the nose does not match the flavor, but it is a nice beer. Serving type: bottle 09-27-2012

(labelled as gilgamesh) pours hazy red-brownish with a creamy light beige head, good retention and lacing spots. red fruits, toasted coconut, tobacco, delicate woodsy and bourbon vanilla notes, nice blend of lactic/acetic (read not too acetic, just perfect in fact). surprisingly never boozy. moderate carbonation, light to medium body - oily, very nice grassy-peppery and lightly astringent and acidic finish. awesome ba-concoction again from upland.

Bottle, as gilgamesh. Nice dark red copper color with white head. Nice soured aroma, sour cherries, suprisingly not acetic, rather citric, fruity, with traces of bourbon and oak. Taste is a nice mix of tart and sweet, not too much of either, not overly acidic. Medium to full bodied palate but rahter delicate considering the abv. Pleasantly surprised by this beast’s drinkability.

Bottle, under the name Gilgamesh. Slightly hazy amber; nice, sweet with pleasant tart finish. A little funky, a little cheesy, some brown sugar and tart. Really nice. Surprised the ABV is this high.

750mL bottle, pours a hazy dark amber / mahogany with a medium beige head. Nose brings out sour red fruits, a touch of vinegar, oak bourbon barrels, and some acetic notes. Flavour brings out loads of boozy sour dark fruits, loads of alcohol, some acetic notes, and a little vinegar. Quite boozy, certainly reminiscent of the 10+%. Fairly complex, with quite a bit of vinegar and acetic notes. Solid take on a Flanders Red. Overrated, however.
