Previously known as Gilgamesh. Continuing our adventure into the realm of sour ale brewing, we designed a recipe to create an Upland version of a traditional Flanders Red. Melding flaked maize into a turbid mash and adding Belgian candi sugar during a long kettle boil, we prepared this ale for epic proportions. We then incorporated wild yeasts and other acetic and lactic acid producing microorganisms for a year-long oak fermentation in bourbon barrels, which had previously been utilized to age beer. The journey was worth the hardships.

A - Reddish tan hues, 2 finger head

S - Nose is strawberries and sour cherries with a hint of coconut

T - Taste is really nice. i get a lot of fruit and berries, a hint of bourbon but mostly a solid and drinkable flanders red

M - Tart finish, full bodied

O - Really nice and itís something Iíd like to have again.

Reddish tan. 2 finger head. Nose is strawberries. A hint of coconut and sour cherries. Taste is nice. Full bodied I get lots of fruit and berries. Loaded with tart finish. Nice oak presence. Sweet finish. Not much bourbon. 3.9/5

Bottle thanks to erica..Pour is dark brown with a thin head..Nose is nice tartness, apple, wood, funk..Taste is wet wood, socks, nice caramel, cherries, plum, funk.

Pours murky cranberry in color with a decent amount of sediment and a tannish head. Aroma brings some sweet berry and tame acetone. Flavor is refreshing, a bit juicy like cranberry juice berry and tart blended well. The body is much lighter than expected, not thick or syrupy at all. The yeast seems not to have developed as much as it could yet either, it is not overly tart or sour at all.

Big thanks to Gription79 for the share. It pours with a clear deep copper body that supports a full light tan head of foam. The aroma offers up smooth even sweet malts as well as a mix of peach, lime and grapefruit with a light and soft vinegar and then mild sour sort of tartness in the background. The taste begins mildly sweet and moving quickly into vinegar and some tartness. It starts pretty vinegar like and stays that way right into the finish. Thereís plenty of tartness and vinegar notes here to keep the "sour-heads" happy.

Musty, sour aroma. Flavor is sour, spicy, fruity. A little caramel malt. Some warming alcohol--but canít taste it.

Poured into a tulip. 4.5 A: Opaque cherry mahogany color. One and a half fingers of frothy beige head. Retention is very good, especially with the ABV and a gerthy ring of lacing is left. 4.25 S: Supremely fruity with tons of cherry and berry notes. Sweet with notes of caramel and basement funk. Not a lot of acidity, but enough to tickle the senses and give some complexity. The bourbon is found on just the most superficial level. I doubt I would have found it if I didnít know it was in here. 4.25 T: The bourbon also doesnít do much in the taste. Mild acidity, but potent taste. Super fruity with the cherry/berry combo with some plum as well. Basement funk with damp, rotting wood. Reasonably complex with plenty of depth. 4.0 M: Medium body. Good moderate carbonation. Mildly creamy and bubbly. No problems here. Super smooth. 4.25 D: Itís not packing a whole lot in the sourness category, but it tastes great and if it wasnít so expensive or hard to get, you could drink it all night and be quite happy. 750 ml bottle. Pours a brown/reddish color with a small beige head. A big sour nose with fruit and vanilla. The flavor was complicated and complex with vanilla, sweet molasses, wood, intense sourness, acidic at times, deep Flemish brown character. Great presentation.
