COMMERCIAL DESCRIPTION
The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

sampler that poured a lightly cloudy yellow with white head..all I can say is pucker up buttercup. very nice nose of fruit, brett yeasty light malts. the flavor makes you salivate. great persimmon fruit flavor tangy acidic sour funky mess of goodness. balanced throughout. no wonder people are after these lambics.

This was fantastic. Puckeringly sour. Intense with a touch of like a kiwi fruit sweetness to balance it if ever so slighty. Fabulously sour. Thanks cards04 for the sample.

Bottle, thanks cards04. Pale cloudy yellow, like lemon juice. Aroma is sour lemon with a touch of banana and pineapple. Flavour is very sour and fairly salty, lots of lemon and again hints of banana and pineapple. Sweeter as it warms. Too salty but quite flavourful.

Pours a light hazy yellow. Aromas are citrus, white wine vinegar, floral. intensely sour.. Vinegar, white wine, pickle juice. It’s good.. Maybe too sour for me.

Bottle. Pours like cloudy lemonade, almost no head. Aroma is nail polish, burnt rubber, sweet tarts, peach, lemon, bile. Not good. Taste is sour lemon, rotten melon, butter, white vinegar, oak. Pretty lousy stuff, sad to say.

Bottle thanks to Drewface. Nose is spicy, fruity, peppery. Pale yellow color with minimal head. Taste is strong sour. Not most sour upland, but still sour.

Bottle thanks to Andrew. Nose is slightly spicy with a peppery note. Pale yellow with no head. Taste is moderately to strongly sour. I like it.

Bottle. Lots of persimmon aroma, very fruity - fruit juice, light acidic notes. Big tartness and acidity, lots of apple like juice flavor, persimmon, finishes dry from all the tartness and acidity. Not quite as sour as other uplands so a little more balanced.

Bottle. Homer tasting. Pours hazy yellow, small fizzy white head, dissipates quickly, minimal lacing. Aroma is nail polish, funky, apple. Flavor is full on sour, lightly funky, adults and a bit of nail polish. Light body, light carbonation.

Bottle. Hay-colored and cloudy, with one finger of pure white foam. Nose is intensely funky and floral, with hay, lemon pith, dried flower petals, lavender, persimmon. The flavor melds citrusy persimmon with floral honey, almond, wheat and hay. Striking acidity, good balance. Very nice.
