COMMERCIAL DESCRIPTION
The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Appearance - Bright hazy yellow, thin frothy head
Aroma - Yeast rolls, squash, nectarine, vanilla, oak
Taste - Yeast, tropical fruits, oak, taffy?

This was a superb lambic, not really complex but so much flavor makes it a real treat. Not overly-sour either, this one is sure to please all.

Minderbinder (1591) - Québec, Quebec, CANADA - AUG 5, 2013
Bottle 750ml. Pours hazy blond/white with low white head. Some lacing. Aroma is of citrus, flowers, fruits, lime. Taste is of fruits, sourness, acid. Palate: Ligth-medium body. Overall: Good, fruity, but mainly acid/sour. Still nice to have to google a fruit, so at least I learned something.

Bottle shared by Tommy, thanks a lot! Pour is hazy golden with minimal white head and bery light lacing. Aroma is not bad but not that great, a bit fruity, sourness, some strange aromas too. Taste is fruity, wine notes, oak, funk, less acetic than kiwi. Low body and soft carbonation. Really not sure about this one.

Bottle. Hazy yellow pour, no head. Aroma is ultra acetic, fruity, very stinky, powerful fruit and acetic mixture. Taste is funky, very acidic, nothing really to describe the intense mix of sour and not-tasty fruit other than funky, the whole thing is a bit harsh. Enjoyable in a sample size, but not more.

Bottle (750 ml). Thanks to pantanap for this one! Hazy yellow/peach color with a low white head and little to no lacing. The first whiff was so acetic, it burned my nostrils. After that, there’s citrus, peaches, strong acetic presence and light sweetness. Taste is heavily sour with citrus, acetic notes, peaches and light sweetness. Medium body. Bone dry. Not extremely complex and so acetic that it’s hard to drink. Still, it was good and fun to try because there isn’t a lot of Persimmon beer available and because an average Sour is still better than almost any other average style beer.

Just pretty much perfect. Had this at one of the single greatest tasting parties I’ve ever attended and it blew me away. This was my first Uplands lambic and my God was it ever an experience!

Bottle shared by some random people in VT, thanks this was on my radar for a year or so. Pours slightly clearish yellow gold with small to medium white head. Big notes of sugary and tart persimmon, acidic fruits, berries, champagne yeast, and light barn funk. Lots of carbonation, light to med in body. Liked this better then the kiwi lambic.

Bottle generously shared by the Tampa Crew. Pours a hazy yellow with a white head. Nose is some citrus, some chalky persimmons, some vinegar, some tartness, and some orange and funky fruit. Flavor is similar with citrus, some vinegar, some funk, some sour fruit, and some persimmons. Nice sour with a fair amount going on.

Bottle shared at a local tasting, thanks Greg! Pours a clear yellow with a thin head, the aroma has a huge funky front end with all kinds of sour notes coming, the flavor is puckering sour, slight fruit in the finish mixed in with a little bit of sweetness in the finish though, kind of different but not bad.

Bottle. Gusher. Clear yellow pour with a white head. Sour fruit aromas. Tart and acidic with wonderful persimmon notes. Very acidic with loads of carbonation. My favorite lambic to date from Upland.
