COMMERCIAL DESCRIPTION
The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peytonís Big Damn Band. (The Rev himself is a certified Persimmon lover Iíve been told, canít wait to get him a bottle). Being a classic Indiana fruit, we couldnít resist, maybe one day weíll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Bottle thanks to Andrew. Nose is slightly spicy with a peppery note. Pale yellow with no head. Taste is moderately to strongly sour. I like it.

Bottle. Lots of persimmon aroma, very fruity - fruit juice, light acidic notes. Big tartness and acidity, lots of apple like juice flavor, persimmon, finishes dry from all the tartness and acidity. Not quite as sour as other uplands so a little more balanced.

Bottle. Homer tasting. Pours hazy yellow, small fizzy white head, dissipates quickly, minimal lacing. Aroma is nail polish, funky, apple. Flavor is full on sour, lightly funky, adults and a bit of nail polish. Light body, light carbonation.

Bottle. Hay-colored and cloudy, with one finger of pure white foam. Nose is intensely funky and floral, with hay, lemon pith, dried flower petals, lavender, persimmon. The flavor melds citrusy persimmon with floral honey, almond, wheat and hay. Striking acidity, good balance. Very nice.

UPDATED: DEC 13, 2014 Refrigerated 75 cl brown bottle from queenholly, bottled on Febuary 26, 2014, corked and capped poured into a glass. Aroma is acidic, medium body, medium carbonation, and little lacing. Taste is rich tart persimmon, sourness, lemon, and some oak. Lots of flavor, quite intense sour, fantastic, thanks queenholly.

Bottle sample. Poured hazy yellow color with an average frothy white head that lasted with very good lacing. Good tart & sour aroma. Medium to abundant body with tingly texture and soft carbonation. Moderate sour fruit flavor with a solid fruit and small alcohol bite finish of moderate to long duration.

Bottle during upland share. Light yellow pour with white head, tons of fruit sediment, not even a bottom of the bottle pour. Nice tart fruit, persimmons I presume. Light fruit, mild tart flavors.

Shared bomber. Pours a cloudy pale gold with a small white head. Aroma of fruit and funk. Taste is tart persimmon (?), funk, and wood. Nice tartness. Enjoyable.

Bottle, courtesy of a kind soul... shared in a location remote of my dining room.
The beer pours a very hazy sort of peach color with a a small head that fizzes out fairly quickly.

The aroma is acetone, vinegar, lemon, and oak.

The flavor is aggressively sour with loads of tart fruit character, and unfortunately loads of balsamic vinegar character to it as well. As it sits in the glass some lemon rind character becomes a little more evident, but itís hard to get around all that vinegar.
This really doesnít taste like a lambic. Itís not all bad, but man... not my thing at all.

750mL bottle, pours a cloudy blonde with no head. Aroma is hugely fruity, with loads of bright persimmon Ė wow, this is hugely fruity. Flavour is hugely fruity as well, with loads of persimmon, a touch of funk, and more fruit. Others in this tasting are getting acidity on this, but Iím not really getting it. I love persimmon and I love the way itís used in this lambic. Not a lambic, but this is very nice.
