COMMERCIAL DESCRIPTION
The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Light unclear light to medium yellow colour with a small to average, frothy - fizzy, fair lacing, mostly diminishing, white head. Aroma is moderate to light heavy berry - mulberries !, dry. Flavour is moderate to heavy sweet and light to moderate acidic with a long duration, herbs, backing yeast, strange - odd, dry, lacto notes Body is medium, texture is oily, carbonation is flat. Bottled. A hazy light yellow beer with a rim of white head. The aroma has notes of lemon, brettanomyces, and wheat. The flavor is sweet with a strong note of bitter lemon combined with lighter notes of brettanomyces and wheat, leading to a lightly tart finish.

Bottle at Papsø. Hazy yellow coloured with a small white head. Fruity and light acidic aroma of oak and berries. Fruity and light acidic flavour of oak and berries with notes of vanilla. Tart finish of oak.

Bottle 75 cl. Courtesy of Sean9689. Pours a cloudy pale yellow with quite some impurities and a small white head. Tart Bretty nose but with a distinct fruitiness. Light body, very lively - comes gushing for quite a while - heavy carbonation. Tart and surprisingly salty, lots of minerals here. Again a nice fruitiness, barnyard and Brett. Ends tart. 290311

Bottle @ Papsø. Pours a hazy pale yellow color with a small white head. Has a fruity sour funky and slightly spicy aroma with hints of citrus. Fruity sour funky citrus persimmon flavor. Has a fruity sour funky persimmon finish with citric hints in the aftertaste.

Nate2Gs Birthday Bash at Kernel. Clear pale gold beer, short lived bubbly white head. Light dry palate - crisp. Minerally. Nice mildy tart fruits. Touch of gluey esters. Pineapple, orange and lemon and indeed some persimmon! Trace of coconut. Couple of people said there was a pina colada vibe going on here and I can see why! Nice drinkable lambic.

Bottle courtesy of GT2, thanks! Clear pale yellow color, fluffy white head, solid lacing. Aroma of medicinal lemon. Taste is summer fruit, sour pomegranate. Hi carbonation. One of the best persimmon lambics I’ve had.

Bottle at Nate’s Massive Birthday Kernel Piss-Up, thanks to Ken. Pours cloudy yellow with a faint, white head. Sweet persimmon aroma. Sour flavor but not intensely so. Lightly sweet, lots of citric fruits. Medium bodied with fine carbonation. Tart finish, some sugar, citric bitterness, some lemon impressions. Very good, very drinkable.
