COMMERCIAL DESCRIPTION
The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Bottle. Pours a hazy orange with a dissipating white head. Full bodied with a semi soft, fine carbonations. Aroma of persimmon and mead. Flavor of persimmon and honey with a moderate, not over the top sourness. Some alcohol detected on the finish. Unique, but not as sour as the Kreik or Kiwi.

Generously shared by one of the fine Portland RB folks at a tasting - Pours murky yellow / orange with a white head. The aroma has fleshy persimmons, tartness and a bit of richness. It has a medium / rich body with fairly soft and smooth carbonation. The flavor starts off with rich juiciness, fresh persimmons that are almost fleshy and nice (not overwhelming) sourness. The finish is tart and nice. Struck me more as a sour ale than a lambic, but it was very enjoyable.

Bottle - Big persimmon fruit and some funk. Pale hazy yellow with a frothy head. Juicy then watch out for the tartness. Great fruit, crazy tartness.

Bottle. Pours a cloudy yellow with small frothy white head that lasts. The aroma is strong citrus and flower. Thin mouthfeel with strong sour citrus very acidic, sour as hell but good.

Bottle @ Avery Sour Fest 2014. Pour is murky yellow with a small white head and good lacing. Funky, lactic, guava, vanilla, stone fruit, and hibiscus aroma. Taste is salty, lemony, yogurt, lime, , basil, super lactic and hugely sour. Light body with low carbonation. Way to acetic and kind-of a disappointment.

Bottle @ Avery Sour Fest 2014. Pours a milky yellow appearance with little head. Heavy passion fruit, guava, lemon, and other tropical fruits in the nose. The flavor was heavily acetic, extremely puckering and sour. Some funk but the beer so damn sour that it was hard to get other notes. The first beer I grabbed at the festival and possibly the first beer to run out, but it was a significant disappointment to me.

At Avery Sour Fest ’14. Cloudy light orange straw. Nose of stone fruit, guava, light funk. Taste is very sour from the persimmon. Extremely puckering, persimmon flavor is clear, but just too tart for much more than a taster.

Sample during the Secret Barrel Society tour on 05/24/2014: Hazy bright peach color with a medium white head that dissipates steadily. Short strings of lacing on the glass. Fruity and floral aroma. Light to medium body with flavors of citrus, yeast and oak. The finish is mildly funky with a fruity yeast aftertaste. Pretty good all around.

Bottle @ Indy Sour Fest. Tart lactic and funky musty lemony aroma. Cloudy yellow with a small white head. Sour lactic lemon and funky musty basement flavor, with just a touch of balancing sweetness. Light body, lively carbonation.
