COMMERCIAL DESCRIPTION
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole raspberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle from the lottery. Glowing tasty pink. Sour as fuck. Raspberry. Got a bit of funk. Holy shit is this sour. Raspberry plays well with the sour.

Bottle thanks to Lee. Pours a cloudy red and small off pink head that diminishes quickly. The aroma is strong raspberry, oak, and funk. Thick mouthfeel with strong tart raspberry, funk, and oak with nice sour finish. Very impressive.

Scopey 5K Tasting in deepest Croydonia. Thanks to Colin. Murky deep red beer, small head. Palate is dry.and crisp and airy. Pretty sour, almost acidic. Sharp raspberry, touch of sherbet. Light finish. Burns on the way down so yes, too acidic.

Bottle shared at Scopey’s 5000th rate. Bottle cheers to Colin. Hazy orange/redish pour with a bubbly white head. Far too sugary on the nose for me - big tarty raspberries, candied red berries, sherbert and lemon juice. Taste is a tarty bitch! Just so tarty and sugary with an odd peach note. Such a tarty bitch.... Not my thing

Bottle at 5K tasting, thanks to Colin. It pours cloudy deep red with a small off=-white head. The nose is sweet, wood, vanilla, toasty, coconut and some acidity. The taste is tart, raspberry, acidic, earth, faint jam, lemon, lime, pisco sour, deep burn and sherbet, with a dry, tart finish. Medium body and moderate, prickly carbonation. A bit hot and acidic. I like the tart rapsberry action nonetheless.

Bottled 7MAR11 A: pours a beautiful pink with a peach hue. Pretty pink foam cap disappears quickly to a clean surface. Really a pretty beer with murky clarity which lends well to the colors. S: raspberry and lemons with a hint if mint. T: sour with rapsberries and yeast. The beer tastes nice until I swallow. The finish on this is really yeasty and warm with a odd salinity to it. The finish is really destroying this beer for me. M: medium bodied and full carb with a really slick and coating finish for me. O: everything was great until I put it in my mouth. Then it was downhill. Serving type: bottle 09-25-2011

A - pours super murky fizzy cranberry juice with no head because it Fizzed away quick like. S - holy framboise! Raspberry raspberry raspberry. Fresh just under ripe berries, seeds and all. Wet musty oakiness. Tannins and white grape juice. Decadent for sure. M - spritzy fizzy carb. Dry and tart up front. Sweet and thicker end. Medium body with a nice palate. T - tart under ripe berries, green peppers, white grape skins up front. Vinegar, white and red wine, roll into a sweet desserty raspberry compote/cobbler. End is dry vegetal, oaky and very fruit skin. Acidic but not too. O - another nice fruit sour from upland. 4.1
