In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole raspberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Big raspberry framboise character in nose and taste. The mouthfeel a little thick. Other than that there is raspberries barnyard funk and tartness. Enjoyable for sure.

Thanks! 750 ml. split / sampled @’t Schooltje. 10.9.13 Vintage. Deep dark raspberry, vibrant, no head. Nose is insane raspberry, puckering, strongly lactic, lemon sourness quality to the fruit but very vibrant, real fruit, all the same, touch mineral,… Taste is same amazing, vibrant lactic, touch vinegar, lemon puckering raspberry, very tart & puckering but the fruit is immense, lingering sourness with some raspberry pits in the back,… Body is puckering ,drinks amazingly well despite the sourness. Really awesome.

Bottle. APPEARANCE: clear red beer, small very unstable white head. NOSE: dense raspberries, very fruity and sour, little lactic, oak, somewhat syrupy. TASTE: very very sour, dries out actually, very lactic, bit over the top? Even for a sourhead... But loved it!

UPDATED: AUG 19, 2015 A: tons of rich raspberry jam aroma. Very slight funk. A: dark red color with non existent head. gushed slightly. T: super sour backed by a nice fresh raspberry flavor. Not as rich as it smells. Mainly just sour and raspberry though not much besides that. P: thick and viscous with a resounding pucker. Low carbonation left in the beer after the initial gush. Very acidic O: good frambois but not great. Good flavor from the raspberries and sour sour sour. Wanted some more funk and nuances

Shared bottle. Pours hazy ruby brown with fizzy off-white. Aroma is balsamic, raspberry, and plenty of sour funk. Flavor is very fruity and funky with bready notes, berries, and some oak character. Medium body and carbonation.

Refrigerated 75 cl brown bottle, 11/20/2013, corked and capped, from shrubber85, poured into a tulip. Translucent deep red with small pink head which dissipates quickly. Aroma is sour raspberry, medium body, medium/light carbonation, and little lacing. Taste is sour raspberry, oak, and rich raspberry. A shade not quite as sour as the persimmon, but very good.

Batch 3/10 bottled 11/20/2013. Aroma is rather fruity with quite a bit of jammy raspberry aroma. moderate acidity. Light oak notes and tropical fruit hiding in the background with medium light citrus. A touch acetic. Pours a slightly cloudy, bright, vibrant, red with a bit of a purple hue. Small pink head recedes quickly to the edges. Faint lacing and no legs. Flavor is exceedingly acidic; I should have saved some of the Tartuffe to cut this with. Moderate raspberry upfront with hints of oak and tropical fruit. As your palate adjusts the acidity becomes a bit more tolerable and you can pick up citrus fruit and more raspberry. Low bitterness, also a bit acetic. Mouthfeel is medium bodied with medium carbonation. Medium low acidic astringency and low alcohol warmth. Overall, this beer is way too sour. The acidity is really dialed up and somewhat chemically and acetic. Would make a nice raspberry vinagrette.
