Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Very hazy orange with a small bubbly white head that disappears instantly. A funky bretty aroma, slightly acidic with notes of strawberry-like fruity notes. The strawberries are actually quite hard to detect. The taste is quite strange. It’s somewhat tart and acidic with decent fruity notes. Lots of funky notes of horse blanket, brett and barnyard that doesn’t blend very well with the tart fruit notes. Some notes of malts, oak barrel and vanilla. The strawberries are noticeable, but hard to distinguish. The finish is dry and mildly bitter with notes of oak and fresh herbs and grass. Medium body, very sparkling and lively carbonation. Bone dry finish. A good beer, very interesting but a bit tangy. Perhaps it’s a little too bretty. It’s clean yet murky at the same time. Hard to get a grip on. Hazy pale light orange colour with no head. Aroma is musty and horsey with subtile fruity. Flavour is concentrated and rich, musty and light fruity with subtile berry sweetness. Finishes dry and refreshing. Medium body with lively carbonation, somewhat juicelike.

Bottle at MesandSim’s tasting Aug 09. Strawberry lambic on aroma. Strawberry, I mean wild strawberry on flavour. Slightly sour, but not overly so. More wild strawberrry than anything else on the flavour. Some vanilla. Not really sour at all. Some acidity. Drinkable enough.

Poured a hazy gold with an orange glow. Nose was very bright with standard lambic smells, not much berry in the nose. Taste was very tart and sour, nice faint hint of strawberry, no real vinegar or acid, puckeringly tart at times, finishes very clean.

This bottled brew from MSprinkle at a DLD beer festival poured a small sized head of off-white colored bubbles that were quickly diminishing and left behind a hazy uncarbonated orange colored body. The aroma was lambic like and sour. The mouth feel was tingly at the start and at the finish. The flavor contained notes of strawberry sour and tart. A decent one that I would consider drinking again.

The aroma is funk, candy sugar. The appearance is a cloudy orange, white head. The flavor is tart strawberry, vinegar. The finish is both sweet and tart strawberry flavors. Decent.

Bottle at the Where the Wild Beers are event. Pours a very murky and still brown. Milky. Light vinegar, some strawberry. Light acidic finish.

A Mes rate. Bottle at home.
Hazy yellow orange with a slight white collar. Really mellow and downable all round. Just a dash of sourness, most of the tartness seems to come from the strawberries, beautifully clean on the palate with some excellent lingering cherry and strawberry. Not particularly lambic like, more slightly sour fruit beer but it’s absolutely adorable. A proper summer thirst quencher. Love it.
