COMMERCIAL DESCRIPTION
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Sampled at esbls. Looks like pink grapefruit juice. No foam. A funky strawberry nose. Malts. Big funky tartness with strawberries. Salty. More complex fruit. This is a sipper and a sharer.

2014 bottle. Sweet tart lactic strawberry, musty barnyard, and light oak aroma. Cloudy glowing orange with a small pastel peach head. Tart funky cheesy-lactic, musty strawberry, and oaky flavor. Medium body, lively carbonation.

A - pours hazy light reddish pink with fluffy 1 finger light head. S - strawberry Bon Bon candies in the faces strawberry jam, perm chemicals. Acetic acid. Damn this smells sour. M - holy sourness batman! Sour and medium light body with perfect carb. T - strawberry Bon bons, strawberry jam, acetic acid, lemon juice and honey. O - this is a nice sour. The strawberry is nice, more candy than fresh, but nice. So aggressively sour 3.8

750ml bottles shared at Hunahpu day. Pours a hazy reddish pink with a off white head. Tart strawberry and oak barrel aroma. Taste is the same with a bit of a funk acidic finish.

pours hazy red pink orange with a nice pinkishhead. Aroma is strawberries funky a bit cellar sour, not overwhelming but more medium. Flavor as aroma, drinkable but nothing to get excited about really. Never been a big fan of strawberries in sours.

Batch 3-10, the most recent batch that was released in early 2014. Aroma is fairly fruity with quite a bit of strawberry character with some faint, tart raspberry notes. Light maltiness with moderate acidity. Light citric note with medium light barnyard funk. Pours a cloudy reddish orange with a thin, very slightly pink head that recedes quickly to the edges and disappears. No lacing and small legs. Flavor is very acidic with quite a bit of citrus and a hint of acetic acid. Acidity has a small to medium chemical character to it; the beer tastes like a bunch of food grade acid was added. Not much barnyard funk, but some is present behind the acidity; similar situation with the fruit. Not much malt character either. Fairly one dimensional acidity, but as your palate adjusts you do start to pick up a bit of the fruit. Mouthfeel is medium bodied with medium carbonation. Medium low acidic astringency with low alcohol warmth. Overall, the aroma is pretty nice, but the flavor is way to acidic and somewhat overwhelming and chemically. Light oak character in both the aroma and flavor.

Bottle thanks to Chow. Pours a cloudy pink orange with thick frothy off white head that diminishes quickly. The aroma is a strong strawberry, oak, funk. Medium mouthfeel with strong tart strawberry, light funk, easy to drink. Very good.

Bottle: 2014 release Pours bubbly, orange-amber with a thick, slightly tinted, off-white head. Aroma is funky, vinegary, strawberry. Taste is underripe, tart/sour strawberry. Huge flavor and tartness. Very nice.

Bottle shared thanks to b3shine at the RBWG grand tasting! Pours a hazy red orange with minimal head or lacing. Aroma is awesome, sweet strawberry and sour funk. Taste follows, amazing balance of funk and sweet fruit. Thick and chewy, damn, this is awesome.

2013 bottle. Pours...well, let’s stop here for a second. I opened the cage and cork, took a whiff of the beer and noticed that it was starting gush. I mean, near volcano! I grabbed a glass to catch the run-off and got this murky, strawberry yogurt yeast bomb in that glass. Never had this experience, personally, but I suspect it won’t be the last time. After the bottle had time to settle. I got a nice pour of strawberry colored beer, an almost cascading head that settled into spotty lacing, leaving strawberry seed on the side of the glass. Aroma was wild. Stinky cheese. Barnyard funk. Sour strawberry. Very pungent. Taste followed the nose. A thicker mouthfeel with under-ripe strawberry, yogurt, cheese and some nice oak barrel notes int he back end. Had a bit of sweetness to it as well. In fact, the sugar in it began to make itself known as I took more sips of this beer. Very rich. And, outside of the crazy gushing, it was my favorite of the Uplands I have had so far.
