In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Shared at a tasting hosted by Steve Hackley on September 25. Thanks Steve! This was poured from a 750 mL bottle. The pour is a darker orangey pink color with a thin off-white head and no lace at all as it dissipates. Iíve noticed that strawberries arenít very dominant when it comes to flavoring sours, and this is just another example. There is a light strawberry in it, but the bright sour lemon and funky oak really take the fruit away. Itís a good sour aroma, but the strawberry just kind of takes a back seat. The flavor is a bit better. There seems to be a little more fruit present and riding the sour from start to finish. There is a good oakiness that carries through the length as well. I like the funk and the sharp strawberries. The mouth feel is excellent. There is a nice sharp carbonation and a lingeringly sour strawberry finish. It is dry, tart, and crisp. Just lingers for days. Great sour.

Rose color pour oink head that stuck around for a time. Tar strawberry aroma and lemon peel lingering in it. Some oak and funk. Taste of light oak and tart strawberries. Finished oaky and dry with strawberries on to the end. Really nice brew.

Strawberry mostly with some yeast hef notes. Fairly carbonated with much strawberries and some woodsie character. Sweet tarts of strawberry all the way.

Aged 2 years. Cloudy light orange with a very light pink hue behind it. Funky earthy strawberry twang thatís huge and tart and funky and lactic. Very tart flavor with a puckering effect with strawberry sweetness behind it. Tart and earthy sweet and full of berry. Real big tartness.

2013 bottle. Pours out a murky red shade with no head. The aroma has vinegar, strawberry and that kind of musty old closet feel to it. Taste is very sour and there is more carbonation than most Belgian lambics. I like the fruit integration but donít think the base beer truly stands up.

Smell is strawberries and sweet tarts. Taste is tart, sour strawberries. Low to medium carbonation, medium body, and very slight foam.
