COMMERCIAL DESCRIPTION
This brew harkens back to our first Anniversary beer, a cascade hopped Saison aged in gin barrels with apricot. That was our first experience using gin barrels, and we’ve grown to love the botanical nuance and oil rich mouthfeel they lend. This version is the first of what will become an annual release and uses a mix of three wine casks along with the gin barrel, which still shows strongly in the beer. The nose opens with a bit of all of the elements- the spirit, herbs and spices, hops, apricot, brettanomyces and wheat. More fruit shows in the flavor and the beer has a historic dry and bitter profile. The four cask blend has about 10% fresh beer (the base for the 2015 batch) added, which brightens the profile and will allow for an interesting conditioning well over an year.

Pours pale, bit hazy, bit of foam. Aroma is just beautiful, really dryly fruity, lambic like. Just perfect. Taste is following the same vein, fruity, rather dry, just exact amount of carbonation. Really good. Perfect saison.

Thanks to ShoulderBroken for sharing the bottle! Half the bottle foamed over so this is based on what was left. Poured into a taster showing a finger of clean white foam and very cloudy deep yellow. The nose shows sweet and clean lemon drops. The palate is highly carbonated and light bodied. Very fruit forward showing peaches, apricot, and light citric fruits (oranges). Entwined with a light sweet malt throughout. Citrus and zest bitterness. Overall a fruit forward extremely well done saison.

Hazy chalk yellow. Juniper berry, wheat funk with a bit of pepper. Dry funky, pepper, juniper berry, so smooth and super balanced, quaffable. Amazingly approachable one of the best american saisons ever. Wow.

Pours a medium golden orange color with two fingers of thick foam. Lots of nectarine, citrus peel, rustic grain. Nuances of wet oak, funky brett and layers of floral hay, soft fruit esters and a lingering hint of herbal nuances.
