COMMERCIAL DESCRIPTION
Last year we added some fatali peppers to an oak barrel of Four, lending it a fruity flavor and some heat as well. We enjoyed that batch quite a bit and plan to do a blend of three barrels this go round, all of which were brewed at different times ranging from April 2009 to just a month ago (December 2010). The barrels also have different yeasts and bacteria in them as well which should make for a pretty complex profile.

Shared from a 750ml at Beer Mongers. Ok so yeah I know, sour barrel-aged chili beer isn’t everyone’s forte. Well it is mine. Smells like stone fruit, chinese food, vines and earth and ends in chilies. This thing is so bright on the palate! Hot and sour sauce through and through, tart and spicey, tons of apricots and peaches. I freaking loved this! If weird beers or chili beers are your thing, definitely hunt this sucker down.

On tap at the Brewery. Pours a clear copper color with a large white head. The aroma is only light pepper, but big lemon zest, some wood. The flavor is more oranges and lemons, slight sourness, very tart and zesty, but the finish hits you hard with burning heat. Not really a ton of pepper flavor, more heat in the back of you throat. Good. Not super drinkable, but that’s OK.

750 thanks to Prufrockstar. LIght and yeasty. Blond color. Pepper finish that sits in the back of the throat.

Pours a hazy golden with a thin white head that leaves some lacing. Aroma feels really fresh, almost mint-like. Taste is citrusy/acid and tart with a hot chili aftertaste. I didn’t think it was over the top, though. It made for a fun drink, one that I would only consume in small quantities (4oz or so). Body is light and it is quenching to some extent. Overall it might have been a little too pepper heavy but I still enjoyed it more than the #5 and #6.

750 ml bottle shared with Tom and chums. Pours an opaque beige-yellow with a short lived white head. Aroma is wheat, dry, tropical fruit and lemon. Flavor is wheat, oranges, tropical fruits, lemon. Finish is...peppers. Hot peppers. As in, chilis. Hot. Light to medium body, average carbonation. Spicy, but flavorful. Most enjoyable.

Bottle (750 ml). Shared by mathieuc, thanks! Hazy yellow with a low white head and some lacing. Aroma is yeasty with mint notes, lemony and light spicy notes. Taste is lemony and yeasty at first with light fruity notes, but when the peppers are in there and take all over the place. Light body. Good carbonation. Hot mouthfeel, too hot for my liking in fact. I strongly prefer the regular version of the Four. Listed as a Sour Ale? Weird.

Bottle from mathieuc, thanks a lot! Pour is hazy blond with white head and little lacing. Aroma of chilli, wheat, funk. Taste has funk, wheat but then the chilli takes the spot without being overwhelming, light oak and little acidity. Low body and medium carb. Strange combination between a saison and chillies. It was not bad actually.

750, capped. Pours a cloudy medium gold with a loose white head. Light stringy lace. Big tart tangy red/green pepper nose, along with some nice balsamic notes. Creamy medium body with lively carb. Balsamic, peppers, dandelions, and a little kick of heat on the mid palate. Mild clinging soft heat on the finish. Very nice beer. One of the better pepper beers around for sure.
