Last year we added some fatali peppers to an oak barrel of Four, lending it a fruity flavor and some heat as well. We enjoyed that batch quite a bit and plan to do a blend of three barrels this go round, all of which were brewed at different times ranging from April 2009 to just a month ago (December 2010). The barrels also have different yeasts and bacteria in them as well which should make for a pretty complex profile.

Bottle Orangish yellow pour with a thin white head. Aroma is is Brett, peach pits, and lemon. Flavor is more lemon, still brett, a little bitter stone fruit kind of thing, nice light sourness. Long light sour finish. The peppers fade in and out, they hit mid palate and then real late in the finish on the lips and cause a light warming effect on the tongue. Darn good for a light beer.

Bottle from last year (2013). Pours crystal clear pale orange golden, medium creamy off-white head, dissipates slowly with nice lacing. Aroma is tart lemon, oak and a bit of funkiness. Flavor is white whine, oak, light sweet and light plus tart. Pepper spice comes on mid swallow and builds to a pleasant, not overwhelming, heat level. Spiciness lingers to the far finish. Lightish body, medium carbonation. I really really like this beer. Why did I not buy more???

Dis be a 2013 bottle. Pours a crystal yellow with a glass surface. Smells tart, some funk, some skunk, a touch of bell pepper and lemons. Flavor is a bit more tame with some tart, some grain and corn, some mild funky manure. Thin bodied with sharp, tight hi carb and a dry finish. Nice beer. Nothing special from this bottle, but pleasant.

Bottle from CANBIF 2014. Somewhat clear mild amber with a nice white head film. Starts iff with brett, farm, high carbonation, mild body, chilli hits you more on the finish and coats the palate with a nice slow heat as things dry out and there is a bit of sugar to make it easier to bear, also some tartness, tasty.

Bottle share from Ferris, thanks man! Clear yellow pour, nice white head. Aroma, yeaaaa, lots of brett funk, oak I don’t really get peppers but Ferris swears I will pooping hot sauce tomorrow. Taste, brett funk up front, light citrus and whoop there it is, spicy meat balls, it burns but not in a bad way. This is some kind of beer, I thought it worked, others thought it didn’t guess I like spice’n’Brett.

Straw golden with a big fizzy white had, aromas of citrus, funk, no sense of chili. Taste is nicely tart lemon, citrus, and then a really slow burning chili heat. The heat is not overwhelming, is really nicely accenting the beer. One is the better chili beer no doubt

quite the different beast than Four even before the peppers get involved. Nice dry barrel brett and funk character not present in the original beer. The heat takes a while but is there on the back end and grows a little as the beer opens up. This was good enough to make me wonder why we don’t see more peppered sours.

bottle sample, interesting beer, fruity funkiness, tart sourness with a blast of pepper heat. heat lingers on the palatefor awhile. not something iwould drink a lot of but it was pretty good

Bottle from Iowa’s best grocery store. Pour is cloudy, light orange with a small white head. Nose is a mix of citrus and barnyard. Taste is immediately sour then some heat from the peppers while my mouth is still puckered. Whoa, does this do a number on my throat. Between the heat and the acid, it is a touch much initially. Interesting for sure. Not a beer I would want that much more of.

Pours a dirty dull light yellow color. The smell is citrus, wheat, yeast. The taste is yeast, spice, wheat, citrus ending quite dry. The body is light and the carbonation is active.
