Four is truly a light yet flavorful beer. The recipe uses a good portion of wheat and incorporates a sour mash into the process to make it slightly tart and extra refreshing. It has delicate aromas and flavors that span a range of floral, grassy and herbal notes. The finish is extra dry and makes the beer a great beverage to pair with food, especially various cheeses and shellfish.
Malts: organic pale, organic wheat, organic munich
Unmalted: rolled wheat
Hops: hallertauer mittelfrüh

750 mL bottle poured into my Odonata saison glass. Bright clear gold with a massive rocky white head which takes a while to settle down enough to allow me to take a sip. Aroma is piney, lemony, and metallic, very bright and bursting out of the glass. Seems a bit solvent-like with some sharpness to it. Flavor continues the sharp acidity of the aroma, but it’s not pleasant as in a typical sour beer, it’s more distracting and overpowering. Big lemongrass/lemonade note up front, followed by a more welcome cereal graininess and dry finish. I’m thinking this might have a slight infection.

Draft. Pour is straw yellow with a generous bubbly head, good lacing/retention. Aroma is cereal grains, herbal/grassy hops, lemon. Taste is bread, light grassy hops, soap. Palate is quite watery, lively carbonation, low bitterness.

UPDATED: MAY 27, 2012 Bottle @ home. Hazy, golden yellow orange appearance with a bubbly white head. Bready, light orange citrusy, a touch spicy belgian yeasty, golden malty nose. Somewhat tart, orange citrusy, tangy, mildly spicy belgian ale flavor. Very light drinking saison. Pretty good beer.

Bottle, thanks emacgee for sharing! Hazy orange with a lasting white head. Looks nice. Nose is grassy and herbal, some lemon, and apple skins. Flavor is similar, bur the palate seems way too light and the tartness was more green apple-y than lemon which I wasn’t a big fan of. Solid, but not great.

750 ml bottle. Nice, clean citrus hops aroma, light pils malt, fruity, pepper. Deep golden, quite clear. With a medium, fine, dense head. Light malt flavor, grapefruit, dust, quite dry, light body, prickly carbonation, minerals--a bit too much, sulfur? Light sweetness, and not too bitter either. Nice, though maybe not quite great, and very sessionable and refreshing.

(750ml bottle from Bruery Provisions). Pours a cloudy golden color with chunky white head that leaves some lacing. Aroma is lemon, wheat and some pepper/spice. Taste is sweet with a little sour. Hmmm. Maybe an infection? Yet, it is tasty.m. Medium bodied with a dry finish. Good.

This pours a golden color with a huge fluffy head on top. Great retention with lots of lacing sliding along the sides of the glass after each sip. This is herbal and floral in the aroma with light spice notes, hay, yeast, and low traces of fruit. Nice. Slightly tart flavors of lemon, wheat grain, and herbs. There really isn’t much funk here. Somewhat dry but not incredibly so. The aroma seems more complex than the flavor but this is still good stuff. It does come across as a bit basic, but I’d much rather have it that way than some of the over-spiced, cloying, higher abv Saisons that tend to be out there. This is certainly clean and refreshing, and in fact, I enjoyed it quite a bit after a little yard work on a hot afternoon.

MrBunn (2588) - The Wet Side of a Dry Town, Pennsylvania, USA - AUG 18, 2011
750 ml bottle picked up in Portland. Pours a hazy golden orange with a thin and soap sudsy looking head. Aromas are understated, but reveal sour, a little barnyard, honey and lemon. Flavor is just as understated and it takes a second or two to adjust to something mellow, but once I’m there, this is very nice. It sits almost without flavor for just a second after the sip, but then the lemon and funk picks up and washes over the palate before fading to a slightly tart finish. I like this, but wish it were just a touch more aggressive.

Bottle from Brewery Creek. A lemony and Bretty aroma greets you. Yellow golden body with lots of soapy head. A lemon and wheat tartness. Lacey. Above average carbonation. A good drinker though a tongue burner with the Thai spice. As a saison, well its tart.
