COMMERCIAL DESCRIPTION
Collaboration with Jason McAdam. A distinctly full-bodied and creamy stout with a touch of brine on the finish.

The "base" beer is a strong (medium strength by most standards, 16.6 plato) stout. We used chocolate wheat instead of the usual barley version along with a pinch of rolled rye.

In the end we decided to add roughly ten gallons of oyster "liquor" that Jason picked up fresh from the coast off a train. We didn’t want to brew an oyster stout without any oyster meat though so we also picked up eight dozen DeCourcy oysters from B.C. and cooked them during the kettle boil. After eating all the wort-soaked meat we cleaned and saved the shells to add later to the beer, post fermentation, like dryhopping.

Bottle at Epic Sour Tasting 2014 courtesy of MrChopin, thanks! A nice break in between sours. Dark chestnut brown color, beige head. Aroma of earthy cocoa. Taste is smooth, rich chocolate and subtle coffee. Tasty.

Shared with Zachary, pours a thick dark rich black pour with a nice java head. Nose is rich malt and chocolate. Taste is rich deep chocolate , malty, no real taste of oysters ? Finish is chocolate velvet with a bit of brine and ends smoothly with some mild lingering. Nice stout. Quaff Score 8 / 10

Bomber. Pours black with a brown head and sweet cocoa, roasted malt aroma. Taste is sweet as well, lots of chocolate, cocoa, roasted malt , and light vanilla with a roasty finish.

Bottle thanks to Nolen for the share! Pours opaque mahogany, small brown head, dissipates slowly leaving decent lacing. Aroma is dark roasted malts, smoky and ashy. Flavor is light sweet, light bitter, rich, roasty, coffee, a bit of saltiness, some acidity. Medium body. Quite a lot going on here.

750 ml Bottle. Natural black pour with a healthy layer of cappuccino foam. Aroma of roasted chocolate malt, dark sugars and espresso. The taste is mostly smoky roasted malt, cocoa powder and coffee with a bit of caramel and brininess toward the end. Overall, a unique Stout that would probably be even better with a plate of fresh shellfish.

Black in color with almost a hint of purple in its appearance. Sweet aroma of a salty chocolate almost like a chocolate covered pretzel. I starts mild and inviting and builds to a salty robust finish which lingers in your mouth but doesn't overstay its welcome. ---Rated via Beer Buddy for iPhone

Not the best oyster stout. Pours a deep cloudy black with a tan head. Smells like sea water. Taste is very briny, with a creaminess, and some salt water in the finish. Had in the bottle.

heavy sepia, thin tan ring. Heavy roast nose, earthy, bit soft with no brine. Light brine front palate, chalky graham cracker and grass with thin, dusty mid showing age before lightly inky licorice bitter finish. Bit thin, but dryness preserved, nice brine.

My ability to rate this beer may be clouded by sour yeast bacteria in my mouth by this point. Pours black with good mocha head and lacing. Some sweet release from sourness. Some nice salty roast aroma and a medium bitter finish. Rick palate. Bottle thanks to MrChopin.
