COMMERCIAL DESCRIPTION
Collaboration with Jason McAdam. A distinctly full-bodied and creamy stout with a touch of brine on the finish.

The "base" beer is a strong (medium strength by most standards, 16.6 plato) stout. We used chocolate wheat instead of the usual barley version along with a pinch of rolled rye.

In the end we decided to add roughly ten gallons of oyster "liquor" that Jason picked up fresh from the coast off a train. We didn’t want to brew an oyster stout without any oyster meat though so we also picked up eight dozen DeCourcy oysters from B.C. and cooked them during the kettle boil. After eating all the wort-soaked meat we cleaned and saved the shells to add later to the beer, post fermentation, like dryhopping.

750ml bottle. Aroma features plenty of coffee and chocolate, lots of roasty malt, some faint burnt sugar notes as well. Opaque black color, with a large-bubbled, foamy tan head. Flavor profile is full of roasty dark malts, coffeeish and chocolatey with suggestions of cocoa. Active and well-carbonated palate, with a medium body. Good stout. Thanks to Tim for the sample!

Bottle a few years back. Hints of cream and burnt fire, notes of bitter chocolate, and fresh ground coffee. Good stuff!

750mL shared with GT2. Dark black pour. Thick coffee head. Aroma of wildflowers, lavender, very fresh, hint of fruity sweetness, fresh salty air. Really pleasant. Subtle, complex. Taste is bitter dark chocolate, cinnamon stick, pretty salty but not overpowering- doesn’t come across as seafood/oyster or anything vile like that. Nice bitter palate with no stickiness, no sugar, super creamy, rich, luscious. Really easy to savor. All the constituent parts come together. Bonus points for being so rich at only 6% and with no stickiness to gain mouthfeel relying on rye/wheat.

750mL thanks to a trade on BA. Pours inky for style, thick, dense mocha foam. Excellent rocky formation and good retention. Nice swathes of lace. Nose up front is super detergent heavy, lots of soap and chemical volatiles. Needs to breathe big time. Sweet perfume, lavender perhaps. Takes awhile to come into focus: rosemary, ocean, dunes, fresh air, wildflowers, fresh strawberry. Taste is very dense, bitter, rich dark chocolate for style- more imperial stout in body. Nice savory smoked sea salt flavor is muted, well integrated. I wouldn’t pin this as oyster stout immediately. Palate is very dense, thick, silky, lovely- rye and wheat for the win. Upright is on my list with Tired Hands for most impressive American brewery after Hill Farmstead. I wonder how that kettle boiled oyster meat tasted? Probably freaking amazing. For normal stout, this has to be one of my all time favorites. Wow.

750 ml bottle shared by Ted. The pour is a black opaque body with a small khaki head. Nice head retention, pretty lacing. The aroma is earthy, char roast malt, a bit of mealy oyster, roast lingers nicely. The taste is the dry char mineral roast, along with the distinctive earthy oyster. The palate is light to medium bodied with the dry mineral finish. Easy drinking beer, well made.

Botella. Black colour. Huge brown head. Great lacing. Roasted sweet malty dark fruity pleasant aroma. Good mouthfeel. Roasted malt in the flavour with dark fruit and chocolate.

27-AUG-2012, tasting @Papsø. Black with huge brown head. Roasted aroma and taste. Much too carbonated. Hard roasted with coffee but partly ruined by the carbonation.

Bottled. Black coloured. Dense light brown head. ARoma of roast, chocolate, sweetness. Flavour of chocolate, roast, burnt sugar, spice. Medium to full bdoied. Ends roasted bitter.
