Six is a dark rye beer with layered flavors including chocolate, caramel, pepper, wood, cherry and tropical fruit. It starts semi-dry and smooth and finishes fully dry and tart with a small bite from the hops. The overall balance of the Six makes it easy to pair with richly prepared meats along with many harder cheeses.
Malts: organic pale, caramel, rye, black
Unmalted: rolled rye
Hops: magnum, tettnanger

750mL thanks to EricE. Pours a full hazed deep brune with sheen, dense, yellowish foam. Thick, sheety lacing. Nose is a bit vegetal, tomato soup, celery stalk. Taste is heavy malt cereal, moving to lemon tea and finishing very whole wheat crackery. Palate is still a bit vegetal, mildly tart, freezer burn flavors. Hmm. As it warms, some chocolate comes through with mild banana esters. Improving to near dunkelweizen. Still odd. ---Rated via Beer Buddy for iPhone

750 ml bottle poured into a snifter. The beer is a dark brown to black with a huge head of beige foam. The beer reminds me a lot of rootbeer. I get a lot of herbal notes and sugary, root nuances. Sweet overall with moderate spice notes coming through. Medium body and medium carbonation.

Sampled from tap at the Oedipus International Beer Festival 2016. Clear, dark brownish red with a massive, creamy, tan head. Sourish, slightly funky and a little fruity aroma of caramel, wild honey, strawberry jam and elderberries. Moderately sour, slightly fruity and a little funky taste of caramel, wild honey, elderberries, red fruits and some cinnamon, followed by a short, slightly tart and quite spicy finish. Medium body, slightly creamy and a little effervescent mouthfeel, average carbonation. Good!

Bottle. Strange beer that starts out like a regular saison (grassy, citrusy notes) but ends with some somewhat disturbing cholate notes.
