COMMERCIAL DESCRIPTION
The Apricot Seven is a blend of two oak barrels soured from Artisanal Wine Cellars. Both were treated identically, being filled with a batch of Seven in early January 2011 along with Oregon apricot puree and a bit of brettanomyces. After eleven months, the two were blended and have been sneaking out here and there in draft form, while this ten case release was saved until now. At this point the beer has a significant earthy and fruity quality with distinct tartness rooted in both apricot and brettanomyces fermentation byproducts. Perfectly suited for fans of funky and sour ales, this one is just fine now but can be cellared for several years for more pronounced wine-like flavor to emerge.

750 ml bottle to snifter (shared by Dogbones). Looks good; a cloudy apricot with white head that steadily dissipates into lacing. Smells good too; apricot-forward. Tastes Like it smells with a semi-tart medium-bodied mouthfeel. Good stuff!

Pour out of 750 mL bottle, hazy orange pour with white head, aroma brought notes of big peach, vanilla, apricot into a bit of wood, funk, slight musty, basement notes with a hint of oak, some slight white fruits. Taste was a mix of white grape, oak, wood into a bit of apricot, peach into a bit of lemon, some slight funky, yeasty notes, finishing tart, slightly sweet.

Bottle, thanks Sean. Cloudy amber pour with a small head that fades to a thin ring. Aroma is a mix of barnyard brett and apricot with some oranges and oak too. Taste has so much barnyard that it covers up the citrus and apricot. Very dry as well. Some white grape and oak. Good but I wish the brett was toned back a bit.

Bottle: Bottle 26/149. Thanks, Sean. Completely opaque peach skin color with a foamy, soapy white head that quickly fades to a semi-chunky collar. Aroma of heavy Brett hay, funky musty, woody cotton & some peach-like, stone fruit acidity in the back-end. Flavor of mild peach, apricot, stone fruit, & a touch of lemon with a strong back drop of hay, cotton & Bretty barnyard funk. Drinkable sour ale with a strong brettanomyces presence. Really nice stuff.

A - pours clear amber orange with no head. No real lacing. S - pineapple, bourbon barrel notes, funk, must and stone fruit. M - medium body, dry and sticky sweet. T - apricot and pineapple to start, bready malts and citrus zest. Some chalky talcy notes. Dried apricots dominate. O - a little too sweet for my taste. Wish I tried it fresh. 3.7

750ml capped. Hazed orange straw, ample white head. Bright lemony apricot, straw, underlying sweetness, some lacto milkyness going on. Lemony brett, oak, white wine grape, apricot is barely present...mostly unripe in flavor, lacto tart/sweet character. Mostly lemon tart throughout, with some apricot, some milky sweetness toward the end. Nice, even though not overly complex or apricot forward.

Really nice up front apricot with some underneath musty dusty hay and lightly herbal notes. Soft funky notes, a touch of barrel notes as well. Pours hazy orange, thin head and lace. Apricot up front and throughout, herbal notes underneath, a touch of bitterness, a touch funky and dry. Lingering tangy apricot. Nice carovonation. Lingering tangy funky. Solid stuff.

750ml bottle. Thanks to Todd for sharing. Bottle 102 of 120... pours a somewhat transparent orangey softer brown hue and topped with a thin creamy white head... Earthy brown and light barrel earthy presence. Lighter dried fruit, not much apricot... Flavors are somewhat sweet with apricot dried fruit accents. Sweeter through the middle. Medium bodied with equalizng carbonation. Not bad with a bit of earth on the finish.
