COMMERCIAL DESCRIPTION
This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

Sole Comp. bottle 94 of 120. Pours a solid golden orange with little heading. The nose is full of dry funk, oak, and crayon. Taste is apricot but the body and the rest of the beer drinks like a dry saison. Most of my fellow tasters won’t agree, but I enjoyed it more than Fantasia for comparison.

First whiff and I’m back at Spuyten Duvyl with Pinot D’Aunis in hand and the sun on my face. Then it’s Jeremy’s living room as SH Berliner Weisse dawns on us. This is another of those ethereal beers, a contrast of fruit lightness, minerals, and earth dryness. Special BECAUSE it exists. Thanks GT.

hazy tangerine, very bright, creamy small bubbled white head. The Fantasia Five nose: cloud of dust, meet peach and cantaloupe rind. Melon and slight hay sting the nose in the end. Flavor is incredible peach, light asian spice, stinky melon finish, heavy dust Brett with warmth. Ultra soft palate, stunning combo, supremely drinkable and refreshing. Lightly simple throughout flavor, but that’s the only complaint. A revelation.

750mL bottle #19 of 120. Thanks to cavemanlawyer. Pours full haze peach with medium white foam. Spotty white lacing. Nose is fresh mangosteen, nectarines. Bright orange fruits. Opening up, there is more fresh jackfruit and Asian market fruit. Some white wine barrel acidity comes through like Lost Abbey Cable Car. Taste is very bright and fresh, juicy mangosteen and lighty tangy nectarine and pineapple. So refreshing. Perfect delicate summer beer. Unfortunately unobtainable. Wish this came in six packs. Plus one for ridiculous beer at low alcohol.

Bottle courtesy of GT2, thanks very much! Cloudy orange yellow color, thick white head, solid lacing. Aroma of dusty apricots and pears. Taste is softly sour summer fruit, applesauce, light spice, white pepper. Delicious.

750mL bottle, courtesy of and split with julian (thanks man!), pours a cloudy golden orange with a small white head. Aroma is full of faded peaches, barnyard funk, and some mild acidity. Flavour brings out lightly tart white wine barrels, oak, some mild peaches, some musty grape and barnyard funk. Quite fruity, but obviously less so than Fantasia, but this one is a lot more oaky and vinous than Fantasia, and less sour and fruity. Highly drinkable. Delicious stuff.

Bottle. Pours apricot gold with white head. Nose and taste of fresh apricot, apricot pit, peach and peach pit, mango pit, stone fruits, Brett, oak, wild funk and yeast. Lots of fresh peach and apricot. Mouthfeel of creamed peaches and apricots with some oak and wild yeast. Amazing. Medium body. Slightly dry finish.

Yeah this is a fun beer. I think Paul shared this at Woodshop? Pours a yellow with a nice white head. Peaches, apricots, light spice, some yeasty notes in the nose. Flavor is dry with good doses of stone fruits, yeast and a bit of hints from the barrel. Nice!

UPDATED: JAN 1, 2013 Bottle (I think more than one) shared over the last month (at Sourfest and at Woodshop). Pours with a hazed golden hued body with a medium sized white head. Aromas are fruity, peaches, spicy, estery, stone fruit. Some gin botanicals as well. Low floral, peppery and jammy. Flavors are fruity, tart, estery, jammy, peaches. Lively bubbles, low funk and quite dry. Very tasty.
The other Bottle: hazed golden hue with a white head. Lightly herbaceous aroma with peach, funk, pepper, stone fruit. Flavors are peachy, sour, tannic and bitter. Lively carbonation. Dry.
