Barrel-Aged Seven Blend: Our Seven strong golden Saison aged for over a year in barrels with wild yeast. Blended to create a tropical fruity sour and funky brew. First release in 2011: 120 bottles. Second release in 2012: 168 bottles

This is a bottle from the first batch. Aroma has a lot of tropical fruit notes from the Brett upfront with some nice pineapple and citrus notes. Some Oakland white wine tannins compliment the finish nicely. Pours a slightly cloudy golden orange with a moderately sized, somewhat thin white head that slowly recedes to a thin film on the edges. Light lacing and small legs. Flavor has a light graininess with a nice tropical fruit Brett character. Nice peppery phenolic notes with some light oak notes and tannins. Moderate bitterness. The Brett is nice and fruity without any plastic phenolics. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really nice barrel aged saison with a great Brett character. Bright tropical fruit notes with clean phenolics. The base saison shines through well.

UPDATED: SEP 11, 2014 Bottle: Barrel Aged Seven w/ Brett edition. Bottle 85/168. Semi-clear, bright golden color. Slow, creeping gush upon opening the bottle, nothing lost. Aroma of heavy, funky Brett, mostly of the rotten & sweet pineapple persuasion. Musty, damp cotton with a heavy backing of dry driftwood. A touch of vinous white grape skins, sharp & acidic, hit the nostrils on the very back end. Taste, as expected, is full of that sharp, musty cotton & pineapple fruity Brett. Super funky, dry, & like a damp cotton blanket soaked with old pineapple juice. Hints of white grape, vinous notes, mild acidity, & finishing, dry wood. A very nice Brett forward beer from Upright. Do not give to those unfamiliar with funk.

Generously shared by one of the fine Portland RB folks at a tasting - Pours hazy orange with a white head. The aroma has a good amount of barrel oakiness, funky brett, rich malt, butteriness and some cheesy aspects. It has a fairly full body with soft carbonation. The flavor begins with rich malt, lots of brett, fairly sour, horseblanket and some husky wild bugginess. the finish has lots of cheese traits and bugs. Quite interesting and way different than the normal Seven.

Bottle at a recent tasting. Thanks Todd! A: Cloudy yellow w/ a white head. N: Brettanomyces, funk, glue, horse blanket, grain, biscuit, lemon, and bleu cheese. T: Very yeasty with a pleasing sourness. Malt underneath and a lingering hop bitterness. M: Mealy, well carbed, medium body. O: This has turned into a brett bomb. Huge, huge yeastiness, which will remind one of aged Orval - without Orval’s pleasant simplicity.

#94-168 A - pours golden orange with 1 finger high head. S - hmmm interesting aromas. Canned Pineapple juice, bretts, sweet floral notes. Caramel malts and some interesting fruity desert. M - medium body. Lightly tart with spritzy carb. T - canned pineapple juice, floral notes, bretts fierce and sweet bready malts. Yeasty and fruity (that canned pineapple juice with a hint of tin...) O - Interesting smell and taste, can't place it. Wish I could have tried it fresh. 3.9

Bottle 750ml. Pours hazy golden with no head. Aroma is of fruits, bretts. Taste is of fruits, bretts, sourness. Palate: Light-medium body. Overall: Very good. Awesome bretts.

Pours a hazy golden with a thin white head, no notes about retention or lacing. Aroma is tropical fruits, bretty/funky and winey. Taste is explicitly tropical with pineapples being at the front. Body is light and carbonation is "just right" (low-med). A really nice one!

bottle @ cascade + upright tasting sessions - ’coz we’re porks. pours hazy bright yellow with a nice white head, some retention and lacing. bretty, lemony, woodsy, spicy, very fruity, light acetic notes. bright to average carbonation, light body - oily, grassy-herbal dry bretty finish. very nice but lost a bit of subtle characteristics of seven.

Bottle (750 ml). Shared by hoppypocket, thanks! Hazy golden with a small persistent white head and good lacing. Aroma is of fruity brettanomyces, winey notes, light malt sweetness and light floral/herbal notes. Taste is slightly to moderately sweet with winey notes, fruity brettanomyces, caramel, floral notes and light oak spiciness. Medium body. Moderate carbonation. Winey mouthfeel. Another great barrel treatment of the Seven. Complex, drinkable and lovely! I preferred this one to Rose City Seven, but my favorite remains De La Seven!
