COMMERCIAL DESCRIPTION
Cuvee Lactovasilios is a two cask blend made from a Berliner weisse style wort. The brew was fermented directly in several barrels, but this small batch version was done in the ones that previously held the Fantasia, our annual limbic-esque peach beer, and later a round of Five. The fruit originally in the barrel stayed the entire time, becoming a habitat for different yeasts and bacteria, some pitched by us and others coming from the orchard. The fruit also retained some of the Five, which lends this Cuvee a very slight bitterness and hint of saison character. Coupled with the mixed yeast and bacteria barrel fermentation, the finished beer even takes on some Geuze-like qualities and while ready now will certainly mature well for several years.

Cloudy golden color with compact head. The aroma is creamy, biscuity, lightly sour, vaguely vinous and a bit footy; very interesting. Light and dry body; mild flavor, but with moderate lactic acid, fresh, with a light fruity note. Almost no bitterness.
Pleasant beer.

Bottle courtesy of GT2, thanks! Hazy pale dark yellow color, small coca-cola head. Aroma of earthy and dusty lemon, hay, subtle seawater. Taste is softly sour citrus, subtle feet. Not bad.

Bottle. Pours cloudy yellow gold with quickly dissipating white head. Nose and taste of tart lemon, banana, wheat malt, light soured citrus, lactose, saison yeast and light peach breads. Body is on the lighter side of medium. Refreshing.

Bottle shared by GT2. Pours hazy gold with a small, effervescent white head, short retention with no lacing. Aroma is lactic grapes, spicy wheat malt. Flavor is lightly lactic grapes, light hops and bitterness with a dry finish. Light body and moderate carbonation.

Bottle... Clear golden ale with no head. The nose is tangy, woody and a touch buttery. Medium-bodied with a milky mouthfeel and lazy carbonation. The flavor is tangy - not quite tart – and offers some nice fruitiness. The tangy, lightly buttery finish leans toward the flat and mundane. The diacetyl is distracting, but not a total buzz-kill. On tap at PIB, pours cloudy faded yellow with a small white head. Nose brings out some toasted oak, citrus and wheat. Flavour is a tad woody, with some gin notes, citrus and wheat. Pretty dry and light on the tartness for the style. I prefer the non-BA Lactovasilius, but this is still nice.

Nice dry tart, sour, mouth-puckering beer here. Super light and effervescent. Medium to mild funk. Nice light fruit flavor.

UPDATED: MAY 11, 2013 750mL thanks to Brainlair and ryan. Pours a flatter deep, clear orange. Little to no head. No lace. Nose is heavier diacetyl. Taste is tart and sharper Berliner Weisse lacto character but with very heavy oil and diacetyl. Lots of dairy thickness and lactic tartness. A bit too buttery. Perhaps will improve in bottle over the next year or so to clean up the diacetyl.

750mL thanks to brainlair. First one was a diacetyl bomb so let it rest for 8 months. Pours clear light golden. Light white foam. Not the greatest nose- similar to Bells Oarsman with vanilla, sour mash wheat, quite funky with mild diaper and adjunct lager. Taste is very light- mild tangerine acid. Quenching, refreshing. Palate is very nice- but watery even for Berliner Weisse with no dairy lactic finish. Still, this has improved immensely and is probably what was originally intended.

750ml bottle: pours a hazy golden with a spotty-lacing white head. Has a fresh semisweet wheaty nose and some floral tartness. Starts with good effervescence and light tartness with a subtle sweetness before a drier smooth finish. Pretty true to style, but could be a little tarter.

Bottle courtesy of GT2, thanks for making sure I got some of this! Poured a slightly hazy yellow-orange color. Light, slightly tart, citrus notes, in the aroma. Flavor is tart, slightly funk notes. Not bad at all! Really liked this one.
