COMMERCIAL DESCRIPTION
Old Tom Blend is composed of fresh Four with a gin barrel fermented saison from the Fall of 2011 that spent over a year in cask. The gin barrel charachter is defined by light oak notes and mixed botanicals leaning on juniper, pine and citrus which also impart a slightly slick moutfeel from their oils. The young Four livens the beer with herbal hop flavors and a different type of bright acidity. The blend comes across quite balanced between the flavors, maintaing a dry finish that stays smooth as opposed to agressive. If you can imagine a vermouth based on sparkling wine, it would probably be simialr to this. Enjoy now or cellar one additional year.

Bottle @ GT’s Cat Cabana. Thanks, GT. Lightly hazed golden pour with a white head. Fruity, apricot aroma. Apple cider, lime, and lemon. Gin, a lot of juniper herbal qualities, and a touch of vanilla. Tons of lemon-lime on the palate. Nice tart citrus, some cider, and juniper. A touch of rosemary, vanilla, and oak. A bit of flour and fresh dough malt character. Solid stuff.

Bottle, mucho thanks to GT. Pours a hazy yellow with average foam. Very floral bouquet of juniper, light oak, lemon-lime, faint pepper. The palate is very fresh and pure with lemon-lime, spring flowers, light rosemary, and a definite gin note which is quite complementary with everything else. Delicate finish.

>> Thank you Brian for this wale. Clear light straw golden with medium carbonation, wispy white foam. Nose is delicate but expressive of Upright’s best of the best botanical Gin barrel mix and house funk: lime zest, juniper, rose, garden flowers, fresh and inviting. Taste is very light, almost grisette in palate, with fresh lime spritzer, lime seltzer, mild dough. Overall delicate but absolutely stomped all over the bottle of Special Herbs we had back to back.

2013-12-04. Lightly hazy bright yellow body with a small foamy white head. 3+ Aroma is quite pleasant. Lightly grassy, floral, light yeast, muted wood accents. Flavour is similar, moderately bitter throughout, lightly sour and tart around the edges, almost vinous fruit. Light lemon hints. Average bodied palate, pleasant carbonation. Subtle but lovely. Bottle from Upright. Pours a mellow golden orange, decent amount of off-white head. Aroma is fluffy, bright, some yeasty notes and some gin poking through as well. Funky and fun, nose is brilliant. Body is lively and bright, finish is subtle and sweet, with some berry and bright citrus notes in finish. Could drink this all damn day. Another reason why Upright are amazing.

On tap at the brewery. Pours a cloudy yellow/orange color with a small white head. A slightly sour big juniper/gin nose. A great flavor: lively zangy fruit, with big gin, light wood, tangerine, light heat, slightly sour mostly from the gin. Interesting.

Tap@ Upright... Poured vibrant, hazy yellow with a white head. Nose had gin-like notes with botanicals like spruce and pine. Similar flavors came through in the flavor with an added mark sweetness and some perfumy floral notes. A little daring towards the end. Gin spirit notes, vibrant and lively, yet not a whole lot booze warmth and wood from the barrel.
