This bottling of four was brewed in June and aged in two pinot noir casks, each filled with over one hundred pounds of cherries. The fruit is a variety names Brooks from Baird Family Orchards that has a beautifully deep flavor and color. We decided to try an experiment and leave the stems on, and the resulting beer developed quickly with a huge tannic profile and character reminiscent of some red wines. It was not inoculated with further yeasts or bacteria, so the cherries dominate the profile and provide natural acidity. The beer is tasting bright now, but the tannins should maintain the structure and preserve it a long time. 198 bottles.

Poured from a 750 ml bottle. Aroma has a bit of a cherry aroma but that is quickly replaced by a vegetal, peppery phenolic note that mixes with the acidity to create a bit of a pickle character. As it warms a bit of Oregon poop comes out in the beer. Pours a cloudy red with light brown hues and a moderately large, slightly pink, thin head. No lacing and faint legs. Flavor has a cherry note and is slightly sweet with a moderate phenolic note. A bit acidic with some pepper notes. Its an odd beer with a touch of poop in the flavor as well. Light pinot character and oak notes. Mouthfeel is medium light to light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, an alright beer. Definitely my least favorite of the Sole Composition series that I have opened. Weird acidic phenolic notes and a bit poopy.

Bottle shared by me at weekly share. Pours cranberry red with white head ring. Nose/taste of pinot, cherry, oak, white grape, cherry juice and ever so slight touch of lactose. Medium body.

Bottle shared during the satellite Travlr 10K tasting at CBC Clerkenwell - London. Big thanks to Bruce! Pours mostly clear bloody pink with a frothy white head. Juicy and lightly tangy cherry in the aroma. Lovely flavor with well integrated cherry character, subtle funk, moderate sweetness. Light to medium in body with fine carbonation. Lightly tart and funky to finish with notes of cherry juice and light bitter cherry skin. Great balance. Solid.

Bottle, shared at the satellite 10K tasting CBC Clerko #117/198 - big thanks to Bruce, 19/08/14. Hazed cherry red with a moderate off white swirl and edgework. Nose is tarte cherries, light smoke, red berry infused straw, tangy berry mash. Taste comprises light acidic vibes, tarte cherry sour lickings, woody rinse, tannins, light must. Medium bodied, fine carbonation, tangy berry snap in the close. Solid cherrified sour.

Bottle share at the satellite 10k tasting at the craft clerko. Orangey piney red coloured pour with a small pink head. Aroma is sour, tart raspberry and cherry fruit. Flavour is crisp, fresh bright cherry fruit character, light graininess. Crisp clean direct sourness. Palate is light sweet and dry tartness. Very refreshing and good fruit character.

Musty red pour with almost zero head. Fresh cherries, oak barrels, dry fruit peels, crisp & clean finish. Low carb rocks my world. Really nice and insanely drinkable.

Bottle thanks to Bruce. It pours cloudy red with a small white head. The nose is filthy, musty, manure, funk, brett, wood, cherry skin and mild acetic. The taste is crisp, tart, acidic, cherry skin, vinous, wood, grapefruit skin, sherbet and lemon sherbet with a dry finish. Medium body and fine, prickly carbonation. I’m not a huge fan of the nose, but a tasty beer anyhow.

Bottle thanks to GT. Pours a slightly hazy light garnet with minimal head. Beautiful Nuits-St.-Georges/Volnay type nose, sour cherries, light clove/cinnamon, fresh acid, slight oak. Soft palate with remarkable Pinot-like flavors, acid, sour cherry, medium tannin, raspberry jam. What a hugely underrated beer!

murky ruby, thin white head dies quick. Nose is heavy cherry, lambic like phenols in rubber hints. Soft cherry saison front with light pepper, bit of mineral, splinter blue esque with more wood, sticky palate with minor rubber phenols, soft carbonation in the pillowy finish.
