This bottling of four was brewed in June and aged in two pinot noir casks, each filled with over one hundred pounds of cherries. The fruit is a variety names Brooks from Baird Family Orchards that has a beautifully deep flavor and color. We decided to try an experiment and leave the stems on, and the resulting beer developed quickly with a huge tannic profile and character reminiscent of some red wines. It was not inoculated with further yeasts or bacteria, so the cherries dominate the profile and provide natural acidity. The beer is tasting bright now, but the tannins should maintain the structure and preserve it a long time. 198 bottles.

Draft at Fred Fest. Listed as single cask four, described as Pinot-aged four with cherries added. Hazy gold pour, fluffy head. Lightly herbal; honey; fruit in the distant background; light body, moderately tart, good carbonation, lightly toasted wheat, dry; excellent on its own, excellent as a palate cleanser, excellent all around.

Cask at the brewery. Pours a hazy gold with no head. The aroma is cherry skin and wood. Thin mouth, tart cherry, vinous, grape, really nice.

Bottle @ Travlr’s Satellite 10k Shindig. Thanks to Bruce! Deep red pour with a small head. Nose is fairly simple and not particularly engaging. Earthy cherry skin and some general funk. Some dry floral aromatics. Flavor is quite pleasant. Mellow tartness. Tannic. Red fruits. Clean acetic finish. Light body, active carbonation. Fun.

Bottle: Bottle 103 of 198. Murky, nearly opaque vibrant rose red color with a small lavender collar. Aroma of mild cherry, red wine, light wood, lavender, a smal touch of must, generic berry sweetness. Flavor is also moderately vinous with touches of cherry, red grape, wood, strange herbage, mild musty sock funk, a hint of mineral water. Dry finish, lingering earthy notes and semi-tart cherry.

Bottle: The aroma consists of cherry, oak, red wine, dust, and funk. It’s a hazy reddish-orange with a small pink head that quickly fades to a minimal film outlined by a very fine ring. The flavor starts with moderate sweet cherry. The finish has tart cherry, lemon, oak, red wine, and a hint of must. It’s light bodied with mild carbonation.

bottle shared by tom10101, thanks bro! pours unclear bright red with a very small off-white cap showing minimal retention and lacing. spicy and fruity zinfandel, red grapes, but also cherries, bit of jam too; lightly buttery bourbon (!), dill and many other bitter and lightly astringent herbs. lively to average carbonation, light body; tart and balanced spicy finish. very nice stuff again from that series!

Bottle 750ml. 95/198. Pours clear red with no head. Aroma is of grapes, wine, fruits, pinot noir, jam. Taste is of grapes, wine, fruits, pinot noir. Palate: Medium body. Soft carbonation. Overall: Just a tad pop-like. Other than that, awesome!

Pours a clear red with a small white rim that leaves spotty lacing. Nose is of black cherries, raspberries, pinot noir in its vinified form. Taste is indeed of pinot, fruity and moderately acidic. Mouthfeel is vinous with its light to medium body and moderate carbonation. Overall I was impressed by how wine-forward it was, I need to drink more fine pinot noirs now.

Appearance: Clear bright pinkish-red with a small pinkish head and little lacing.

Aroma: Definitely the most "pinot noir" forward beer that I haver smelled. There’s also cherries, brettanomyces, oak and light tartness.

Taste: A little less pinot noir than in the nose, but it’s still the main flavor along brettanomyces, oak, cherries, light/moderate tartness and light herbal presence.

Palate: Medium body. Moderate carbonation. Winey mouthfeel. Slightly dry finish.

Overall: Another wonderful beer from Upright. Certainly the most "pinot noir" forward beer I have ever had, but despite the massive barrel notes, the other components (cherries, brettanomyces) aren’t subdued. Tasty, complex and really enjoyable.

Poured from a 750 ml bottle. Aroma has a bit of a cherry aroma but that is quickly replaced by a vegetal, peppery phenolic note that mixes with the acidity to create a bit of a pickle character. As it warms a bit of Oregon poop comes out in the beer. Pours a cloudy red with light brown hues and a moderately large, slightly pink, thin head. No lacing and faint legs. Flavor has a cherry note and is slightly sweet with a moderate phenolic note. A bit acidic with some pepper notes. Its an odd beer with a touch of poop in the flavor as well. Light pinot character and oak notes. Mouthfeel is medium light to light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, an alright beer. Definitely my least favorite of the Sole Composition series that I have opened. Weird acidic phenolic notes and a bit poopy.
