This bottling of four was brewed in June and aged in two pinot noir casks, each filled with over one hundred pounds of cherries. The fruit is a variety names Brooks from Baird Family Orchards that has a beautifully deep flavor and color. We decided to try an experiment and leave the stems on, and the resulting beer developed quickly with a huge tannic profile and character reminiscent of some red wines. It was not inoculated with further yeasts or bacteria, so the cherries dominate the profile and provide natural acidity. The beer is tasting bright now, but the tannins should maintain the structure and preserve it a long time. 198 bottles.

Bottle thanks to GT. Pours a slightly hazy light garnet with minimal head. Beautiful Nuits-St.-Georges/Volnay type nose, sour cherries, light clove/cinnamon, fresh acid, slight oak. Soft palate with remarkable Pinot-like flavors, acid, sour cherry, medium tannin, raspberry jam. What a hugely underrated beer!

murky ruby, thin white head dies quick. Nose is heavy cherry, lambic like phenols in rubber hints. Soft cherry saison front with light pepper, bit of mineral, splinter blue esque with more wood, sticky palate with minor rubber phenols, soft carbonation in the pillowy finish.

Bottle @ 10K + OT. Thanks, GT. Ruby red pour without any head and very low carbonation. Cherry, red wine, and oak on the nose. Sweet red grape, some straw, and lemon peel. A touch chalky on the palate. Almost still. Nice red wine and oak notes, plenty of cherry (fruit flesh and skin), green apple peel, and some lemon. Good acidity.

Sole Comp’d from brainlair. A: Fuzzy pink head. Very dark red body. N: Cherry, lemons, biscuit, curran jam, black peppercorn and sweet-tarts. T: Moderately with a goodly amount of fruit and sweetness. M: Medium-light body, no alcohol. O: A very soft fruit beer with good all around flavors. A little better when fresh but I still get a kick out of this.

Pours clear red with a small pinkish head. Aroma is fruity cherries a bit sweet. Flavor is sour not too heavily cherry a bit thin dryish.

Brett gone wild? Unbalanced yeast flavors in this bottle. --- tasted while on a long journey to understand the world around me...

Bottle 18/198 with huge thanks to douglass88! Pours hazy ruby purple, small pink head and some lacing. Quite beautiful actually. Aroma is feet, funky yeast, horse blanket, cherries. Flavor is oak, cherry, wood tannins and a bit of smokiness. Medium funk dominates, some vinous notes poke through from the pinot. Medium body, low carbonation. A lot if things going on in this beer, but they really seem to be fighting each other rather than working together.

Beautiful cherry red color. Crazy smell, an entirely new smell i think. Some mix of cherry and smoke and chemical something or other. Harsh. Flavor is much more sensible. Totally tastes like pinot noir, with cherry. I like the flavor, smell is yuck. Strange.

Bottle from trade with Daniel. Aroma and flavor of Pinot noir aged tart saison with cherries. Not really sour, this one is delicate with mild carbonation. Still, slightly preferred this over Beauregard because it had a great pH balance, not acetic when compared. Great beer.

On tap at the brewery. Pours a bright reddish color with a small white head. A big sour nose of wood and cherry. The flavor is mostly sour, almost unbalanced, tart cherries, sawdust, acidic, mellow yeast and vanilla as well. Quite nice. Not super aggressive, and in this sense like a fruit lambic more than say a super sour ale.
