COMMERCIAL DESCRIPTION
This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

750ml bottle. Poured a golden color with a smaller sized head. Grassy, wood, fruity, citrus, and some funkiness.

Wow a big surprise. Shelf turd getting a 4.2! Aroma is peaches coming out da woodwork. The classic upright tart funkiness which I love is clean and lactic with just the right amount of dusty funk to accent the fruit. No hops as the bottle suggests but it doesnt need it. Great peach sour and maybe better then Fantasia?

Bottle from PepsiMart. Nose is lightly woody with moderate citrus zest. A lightly tart aroma, but not overpowering. Pour is slightly hazy gold with a small white head on top. Taste is fruity, with some apricot coming through up front. Then shows off a light sourness. Finish is a bit flat, but overall a very enjoyable palate. Only at the end does it get just a little chest thumping sour.

Poured from a 750 ml Sole Comp bottle and compared to a pour from a Saison du Blodget bottle. Sole composition bottle’s aroma has a nice fruitiness but not necessarily apricot. Some light peppery phenolics with nice oak character. Oak and stone fruit skin tannins. Newer bottle has a bit of a buttery white wine character that the older bottle lacked and a bit more wine tannins and less fruit. Both bottles pour a slightly cloudy golden orange with a small, thick white head that lingers on the edges. Light lacing and faint legs the older Sole Composition bottle poured clearer. Flavor of the older bottle is a bit sweet with some stale grain notes and moderate bitterness. Less fruit, but still a nice fruitiness. Lighter phenolics with moderate oak tannins and light oak character. Newer bottle is a bit buttery and more bitter with a stronger oak character and less fruit. Mouthfeel is light bodied and crisp with medium carbonation. Low, but present tannic astringency that is stronger in the new bottle and low alcohol warmth. Overall, a nice beer but the flavor was a bit of a letdown in comparison to the aroma. Also, the older Sole Composition Fantasia Five bottle is better than the new Saison du Blodget bottle. Older bottle had a better fruit character even though it was old and the new bottle had way too much wine and oak tannins.

Latest batch, bottle. Pours a cloudy golden peach color with small film of white bubbles that subsides. Aroma is very vinous and fruity with a mixture of sweetness and tartness: peach, plum, apricot, fruity hops, musty cork, oak barrel, cedar, grassy and floral hops. Extremely appetizing. Taste is once again quite vinous with lots of orange and other citrus at the beginning fading to white grape, delicate stone fruit, and oak barrel tannins with some hop bitterness too. Excellent balance overall and between sweet and tart – if anything maybe just a bit too bitter. Full, juicy mouthfeel. Complex yet also quite drinkable. A tremendous wild ale and I’d drink it all the time if I could.

Pretty big apricot/peach aroma, stone fruit. Yellow cloudy, slightly sweet from the wine. Medium low carb with an oily sweet finish. Really enjoyed this one.

Bottle: The aroma consists of lightly sweet citrus, cotton candy, faint lemon, and orange peel. It pours a hazy burnt orange with a small white head that quickly fades to a thin ring around the edges of the glass. There is some thin webbing left on the sides of the glass. The flavor starts with moderate citrus. The finish has light-moderate lemon, orange peel, faint floral notes, and some faint oak notes. It’s light bodied with light-moderate carbonation.
