COMMERCIAL DESCRIPTION
This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

Bottle thanks to douglas88!   Comes across as a softer Wild Ale, a little mealy, some barnish notes albeit their aren’t too bright.   Has a very slight white wine aspect.   Could stand to be drier.   Powdery sweetness.   Cabernet or oak, or both also show up.   Good, but not as dry or tart as I was hoping.   A touch yeasty on the finish, with a little mealiness.

Bottle from my PNW buddy Chris - thanks! Clear dark yellow in color with a nice white head. Lots of lacing. Crisp clean slightly hoppy nose. Very nice taste, a little funky, a little hoppy, just a touch tart and lots of bitterness. Maybe a touch of oak tannin in the finish as well. Very nice - I wish I had shared it, but at the same time, I’m glad I didn’t share it!

Pours clear and golden yellow with a small white head. Aroma is fruity, citric and mellow. Smooth fruity, citric and crisp bretty. Fruity and dry citric into the finish.

A - pours clear apricot with almost no head. S - aromas of must, wet oak, dried apricots, light floral hops. M - tart and dry. Lightly hoppy and sweet. T - nice. Dried apricots, floral hops, sweet citrusy notes. Musty oak and honey. O - a nice offering from upright. Apricots really add. 4.2

Bottle at home. Pour is hazy orange with a big white head and great lacing. Lemony, tangy, white wine, lacto, a hint of vanilla, doughy, orange marmalade, pineapples, and biscuit in the aroma. Taste is tangy, lightly bretty, fruit peel, orange, tea, straw, grapefruit, lacto, and honey with a very light sour finish. Medium body with medium to high carbonation. Very well balanced with just the slightest hint of tartness on the backend. Tasty stuff and definitely more of a Saison than a Sour.

Pours a frothy white, quick dissipating head atop a clear, highly carbonated golden body. Lemony nose, yeasty, saison and green leaf. Very lively and light, fresh and slightly oily. Good bitterness and citrus. Like most every Upright - this is pretty good.

Bottle purchased from the brewery. Dark semi hazy amber with an off white head. Nice farmhouse saison aroma with a slight funk, quite fresh, some straw and peaches, green apple skins. Mild carbonation and moderate body, quite dry and a bit of lemon on the finish.

Thanks to a Portland buddy for throwing this in his luggage last time he visited. Shared with EricTeusink. Poured hazy orange with decent head and lace. Nose is fresh light citrus, orange, and fruits that I have never ate before. This lovely. Taste is even brighter than the nose. Nectarine, peach, orange, a touch tropical, a touch distant funk and some nice fruity Brett in the finish. This beer kind of blew me away. Really really nice.
