This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

Pours a frothy white, quick dissipating head atop a clear, highly carbonated golden body. Lemony nose, yeasty, saison and green leaf. Very lively and light, fresh and slightly oily. Good bitterness and citrus. Like most every Upright - this is pretty good.

Bottle purchased from the brewery. Dark semi hazy amber with an off white head. Nice farmhouse saison aroma with a slight funk, quite fresh, some straw and peaches, green apple skins. Mild carbonation and moderate body, quite dry and a bit of lemon on the finish.

Thanks to a Portland buddy for throwing this in his luggage last time he visited. Shared with EricTeusink. Poured hazy orange with decent head and lace. Nose is fresh light citrus, orange, and fruits that I have never ate before. This lovely. Taste is even brighter than the nose. Nectarine, peach, orange, a touch tropical, a touch distant funk and some nice fruity Brett in the finish. This beer kind of blew me away. Really really nice.

Bottle. Colour...clear golden straw with no head. Nose...bright and citrusy with a focus on quince and lemon. Palate...delicate palate, like a vinho verde with tartly dry with lemon pith and seeds, yeast and kiwi. The finish is quick and dry and quite refreshing!

750 ml bottle. Pours amber with light head. Aromas of sharp, sour Brett, peaches, citrus, and wheat. Flavors of oak, green grapes, phenol and a little resin. Moderate carbonation. Enjoyable though more like a weak lambic than a typical Saison.

UPDATED: DEC 4, 2013 Bottle: thanks, Ron! Bright gold & cloudy yellow-ish color with a soapy, slick white head that leaves some nice, dripping lacing behind on the glass. Aroma is full of cotton-y funk, pineapple tinted Brettanomyces, light lemon zest, citrus spritz, a bit of wet hay, & faint must. Taste has lots & lots of Brett from the first sip. Old, funky notes with mild, mildew-y pineapple, damp hay, cotton, & a big back-end finish of lemon & citrus. Light tannin, almost oak-y notes throughout, very dry. Very mild pepper-like, spiced notes. I dont taste much peach influence from the Fantasia barrels, but its a pretty nice farmhouse funky ale.

Golden with thin white head. Aroma is super fruity. Taste is strawberry and some green apple. Somewhat funky. Undercarbonated. Real nice beer, one of my favorites from Upright.

Pours clear blond, light white head. Smell big juicy peach, big citrus hops. Taste hop up front, lots of floral citrus, bit of earth Lighter body Very nice.
