This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

UPDATED: DEC 4, 2013 Bottle: thanks, Ron! Bright gold & cloudy yellow-ish color with a soapy, slick white head that leaves some nice, dripping lacing behind on the glass. Aroma is full of cotton-y funk, pineapple tinted Brettanomyces, light lemon zest, citrus spritz, a bit of wet hay, & faint must. Taste has lots & lots of Brett from the first sip. Old, funky notes with mild, mildew-y pineapple, damp hay, cotton, & a big back-end finish of lemon & citrus. Light tannin, almost oak-y notes throughout, very dry. Very mild pepper-like, spiced notes. I donít taste much peach influence from the Fantasia barrels, but itís a pretty nice farmhouse funky ale.

Golden with thin white head. Aroma is super fruity. Taste is strawberry and some green apple. Somewhat funky. Undercarbonated. Real nice beer, one of my favorites from Upright.

Pours clear blond, light white head. Smell big juicy peach, big citrus hops. Taste hop up front, lots of floral citrus, bit of earth Lighter body Very nice.

750, capped. Thanks r! Goddamn. Pours a hazy medium gold with a loose white head. Huge fruity tangerine nose. Creamy medium body with lively carb. Bright sharp acidic fruity bite on the attack, stays crisp and lemony tangerine right through to a nice puckery finish. Great stuff.

750 ml bottle shared by b3shine bottle 93/120. Pours a hazy golden color with a small white head. The aroma and flavor have a nice fruity character, some peaches, citrus, wood, floral notes, lightly spicy, pale malts, some herbal notes. This was a solid saison for sure, but the additional barrel character has created a real treat. Finish is dry, on the tart side with decent character.

Bottle shared by b3shine. Poured clear copper color with an average frothy off-white head that was lasting with excellent lacing. Moderate to heavy sour yeast and fruit aroma. Medium to full body with a smooth texture and soft carbonation. Medium to heavy blalanced sweet & sour flavor with a medium to heavy sour & sweet finish of moderate duration. Solid complex drinkable beer.

750ml bottle, shared by b3shine. Bottle 93 of 120. Hazy peachy orange color. Minimal white head. Couple bits and ropes of lace. Oaky nose. Medium body. Crisp, light carbonation. Dry finish. Some nice lemon citrus, little floral. Tart taste, finishes dry. Good, oaky sour.

750 ml bottle shared by b3shine- thanks again, Beau! Pours a hazy yellow-orange with a small film for a head. The aroma is pretty floral overall, with notes of peaches, citrus fruits, and oak. Flavor of lemon, peach, oak, floral notes, dry grains, tart candy, and a bit of yogurt. Light-bodied, with a tart, dry, floral mouthfeel and moderate carbonation. Doesnít come across as complex as the original Fantasia, nor do the peach notes pop as much. Still very good, though.
