COMMERCIAL DESCRIPTION
Till the Break of Dawn Saison is named after the music of and dedicated to the late beer enthusiast and musician Adam Yauch also known to fans as MCA from the Beastie Boys. This Saison is delicately spiced with Lemon Grass, Lemon Verbena, and Rose Hips. Another addition to the unique flavor of this fabulous product is the special Upstream Brewing Company’s proprietary yeast strain that’s blend was custom developed by the Brewing Science Institute under the direction of Brewmaster Michael Hall. I hope you enjoy the unique creativity of this fabulous seasonal beer.

Very lemony/grassy tinge at the beginning. Butas you get further in, it mellows out and becomes smooth and pleasurable.

On tap at GTMW - Had to get a pour of one of their Beastie Boys tribute beers. Pours yellow with a huge white head. Nose is peppery and floral, with dusty yeast. Taste is dry and peppery, with floral notes and a lot of dusty yeast. Honey and grassy hops on the finish. Light, biting carbonation. A bit sharp overall, and not my favorite.

Draft. Poured a hazy yellow color with an average fizzy white head that mostly lasted with excellent lacing. Moderate tart citrus and yeast aroma. Medium to full body with a smooth texture and soft carbonation. Medium to heavy sweet spice flavor with a medium to heavy sweet finish of moderate to long duration. My expectation where exceeded.
