COMMERCIAL DESCRIPTION
Not too long ago the beer world lost one of its modern icons, Pierre Celis. Pierre, almost singlehandedly, resurrected what is today one of the most popular styles of craft beer..the Belgian Wit or White Beer- a deliciously refreshing wheat beer originally created by Belgian farmers in the middle centuries, whose primary crop was wheat. Today, the style has a generous range-of-flavor and is often infused with a variety of spices, primarily coriander and dried citrus fruits. In keeping true to Mr. Celis’ homeland of Belgium we additionally brew ours with unmalted wheat using a very thorough mash regime. Here’s to you Pierre! (OG 11.9, Belgian Goblet) Editor’s note: We almost named this beer "Ill-Witted". No, not because we have a sick intellect, but because we actually brewed this beer with local wheat from...drum-roll please...Illinois!

Pours a cloudy pale gold with a medium white head. Aroma is lemon, spice and yeast. Refreshing taste of sweet pale malt, banana, lemon juice and coriander. Very good, but more like a hefe rather than a wit.

Pint bottle. hazy white gold with a nice level white head. Cloves and bananas in the aroma. Wheat is tasted with bananas and lemon. Coriander came later. The finish was dry. A nice beer especially after a long run.

Hazy yellow with a short, off-white head. Lemon and wheat aroma with a subtle hint of smokiness. Taste is wheat, malt, a little cream o’ wheat nuance. Pretty good.

Bottle. Coriander, lemon and wheat malt aroma. Hazy yellow with moderate head. Sweet orange-lemon, coriander, and wheat malt flavor. Solid - good witbier.

Sampled cask-conditioned version at the 2nd annual Urban Chestnut Wolpertinger party in a dimple mug. It poured a cloudy golden colour with no foam or lace. Grainy malt, wheat, and noble hops were well-balanced. Nice banana and clove aromas, faint black pepper. Unfortunately, the cask wasn’t yet at its prime. The beer was thin and watery with almost no carbonation.

It poured a cloudy yellow-gold color with a small white head. The aroma was of citrus fruits, some spiciness and maltiness. The taste was of yeast, wheat maltiness, citrus fruitiness and light fruits. A very tasty Witbier.

Sampled at the Midwest Belgian Beer Fest 2012 - Pours hazy yellow with a white head. The aroma has lots of banana, smooth wheat and a bit of spice. Medium smooth body with soft carbonation. The flavor has the hefe light aroma traits and a hint of spicing. The finish is spicier and dries. As it warms more coriander comes out.

Sampled at the Midwest Belgian Beer Fest. Coriander, orange peel, and wheat in the aroma and flavor. Very solid wit, I would like to try this one again.

Draft sample at MWBBF. Pours a super pale, super hazy, almost milky whitish-yellow color with a finger of white head. Aroma of lemon, wheat, coriander, banana, and white bread. Flavor of wheat, lemon, bready malts, sweet dough, banana, and coriander. Mild. Medium-bodied, with moderate carbonation and a bready mouthfeel. Solid wit.

(tap at tasting room) very cloudy yellow gold with white head. Aroma of spice, citrus, wheat malt. Flavor is , yeast, wheat malt, some citrus, a little spice, and light fruits. The spice isn’t overdone. Nice wit.
