Not too long ago the beer world lost one of its modern icons, Pierre Celis. Pierre, almost singlehandedly, resurrected what is today one of the most popular styles of craft beer..the Belgian Wit or White Beer- a deliciously refreshing wheat beer originally created by Belgian farmers in the middle centuries, whose primary crop was wheat. Today, the style has a generous range-of-flavor and is often infused with a variety of spices, primarily coriander and dried citrus fruits. In keeping true to Mr. Celis’ homeland of Belgium we additionally brew ours with unmalted wheat using a very thorough mash regime. Here’s to you Pierre! (OG 11.9, Belgian Goblet) Editor’s note: We almost named this beer "Ill-Witted". No, not because we have a sick intellect, but because we actually brewed this beer with local wheat from...drum-roll please...Illinois!

Great citrus nose, some bread, coriander. Appears golden with white spotty lacing opaque body. Taste is citrus rind seemingly, the coriander and wheat make an even appearance. This and schnicklefritz make two beers by urban chestnut that I like despite not linking the style.

16.9 oz bottle poured into a stemmed Belgian tulip glass. The aromas are a traditional banana and clove character with some citrus, coriander, and a wet towel note. It pours a hazy banana color with a decent white head that leaves an okay lace - a bit underwhelming for a witbier. The taste is a medium sweetness with a light bitter. The texture is creamy, has a medium body and a good amount of soft carbonation. It finishes with banana, clove, and coriander along with a bread touch. The bread / grain aftertaste is heavy and lingering.

Bottle. Pour is a straw-gold color with a fair amount of haze and a thin head. Aromas are of lemon and orange with a little ester funk. Flavor is very clean and crisp... light honey with oranges and a little spice, but I would be hard pressed to identify it as coriander without the cheater code on the label.

Taster on tap at iTAP-CWE in STL during RBSG. Mostly hazy golden color. Great pillowy white head. Leaves thicker sheets of lace. Good zesty citrus spice aroma in the nose. Less zest in the taste... More sweet. Kind of yeasty in the taste. Medium body. Smooth kind of soft, creamy lighter carbonation. More dry finish. Solid creamy wit.

Bottle. Pours a cloudy pale straw with a creamy white head. Nose is classic. Some sulfur and plastic, light tart notes and citrus. Distinct wheat. On tasting, creamy mouthfeel with a tartness. Big crackery wheat and low orange notes. Clean and refreshing, though a hint of plastic creeps in. Good shit.
