STLIPA, Revolution Series #7: We pronounce it “sta-leep-ah”, you pronounce it how you like. STLIPA, which is the acronym for St. Louis India Pale Ale, is actually a DIPA (Double or Imperial IPA- i.e., double the stats of a traditional IPA). We hope it’s a ‘sleeper’ that you’ll include in your set of favorite DIPA’s from one of the best beer cities in the world: St. Louis. Hops- Sterling, Cascade, Mt. Hood, Willamette, Chinook. ABV- 8.5%, IBU’s- 100, OG – 18.5 Plato (UCBC Goblet)

Pours dark golden with slight orange tint. Aroma is citrus and nice floral nose. Taste is surprisingly lighter in body than what i expect for a dipa. Bitterness of hops melds well with malt backbone and gives way to a clean strong fruity hop profile on the front end and finishes the same and quite dry. well done beer

Pint bottle. A golden pour that is kind of flourescant. A rocky off white head that leaves copious lacing. The foam never leaves. An aroma of citrus! Floral, and malts. Some sourness to start and it is citrus with pale malts. Tangerines and mango with a hint of spice. Bitterness mixes with the sourness and is significant. This is a hop lovers delight. The sourness is a little much for me but just a little. Another winner from UCBC.

On tap. Orange color with white head that puddles across the top of the glass. Aroma is fruity, floral hops. Taste follows the aroma with some citrus added in. Medium body with soft carbonation. Very good IPA.

Sessionable DIPA with citrusy nose and opaque orange-yellow color. Pleasant hoppiness on the tongue, but without the heaviness or sweetness I'd associate with the style. ---Rated via Beer Buddy for iPhone

The full-bodied complexity of this IPA is what makes it shine; however, I’ve noticed that the integrity of this beer erodes quickly. I experienced marked differences between the beer when purchased and consumed very soon after bottling, versus a month later, in that the fruity hop flavors were less pronounced and the bitterness took the forefront of the hop presence. If you can get STLIPA fresh, expect very forward citrus flavors (Cascade & Centennial?) which coat the mouth, and just the right level of bitterness and carbonation. At its peak, a beautiful beer.

Bottle. Head is initially large, frothy, white, mostly lasting. Body is dark yellow to light amber. Aroma is lightly malty (toasted grain, cookie), moderately hoppy (resin, grapefruit, apricot), with a note of lemon juice. Flavor is moderately sweet, lightly to moderately acidic, lightly to moderately bitter. Finish is lightly sweet, lightly to moderately acidic, moderately bitter. Medium body, watery/oily texture, lively carbonation, lightly to moderately alcoholic. Kinda plain, watery, and a bit sour, but not too bad. Nose is almost entirely resiny-grapefruity hops...not much else going on; soured fruit note comes out as it warms. It’s like a toned-down west coast IPA. Looks fantastic, though...big fluffy head that lasts and lasts over a hazy light amber body. Well-hidden alcohol too. Non-abrasive, so that’s good as well. But on the whole the nose and mouth experience is pretty ordinary and unexciting.

Tap @ Urban Chestnut. Pours a milky yellow orange appearance with a white head. Bright juicy citrus fruity, mango, sweet, refreshing aroma. Somewhat spicy, mango, pineapple, citrusy with some bitterness on the finish. Pretty tasty.

Bottle from Randall’s. pours a hazy deep gold with a frothy white head. Nose is all clean. Pine and resin, grapefruit skin, earthy Malta and light fruit from the yeast. On tasting, quite fruity with a moderate bitterness and some malty sweetness. Earthy malt that is full but not caramel. A big beer and well executed. Not a huge hop bomb but they don’t always have to be.
