STLIPA, Revolution Series #7: We pronounce it “sta-leep-ah”, you pronounce it how you like. STLIPA, which is the acronym for St. Louis India Pale Ale, is actually a DIPA (Double or Imperial IPA- i.e., double the stats of a traditional IPA). We hope it’s a ‘sleeper’ that you’ll include in your set of favorite DIPA’s from one of the best beer cities in the world: St. Louis. Hops- Sterling, Cascade, Mt. Hood, Willamette, Chinook. ABV- 8.5%, IBU’s- 100, OG – 18.5 Plato (UCBC Goblet)

TH28 (76) - - AUG 9, 2013
Appearance is copper with a thick white foam cap. Aroma is a little citrus and pine, with a hint of earthy/ herbal as well. Overall aroma is a bit subdued for the style. Taste is light caramel and toasted malt with hint of apricot that gives way to a smooth, intense bitterness. Mouthfeel is light to medium. Finish is fairly dry and balanced. Pretty solid beer but lacks the intensity of most beers in the DIPA style

Bottle. Orange pour, white head, little retention/some lace. Aroma of grass/citrus, caramel. Taste is bitter, grassy/citrus hop, sweet caramel. Palate is soft, oily, bitter finish.

Bottle from the big Big Red, Bloomington. Nice bright orange pour, pretty well carbonated. Nice nose of ripe fruit, bright grassy notes, and modest dry earthiness. Mouthfeel is full, occasionally a bit slick, but the finish is nicely prickly and dry. Some malt sweetness comes through in the taste, but it’s largely a grassy and dry affair. Doesn’t really stand out in a very crowded field, but it’s pretty solid.

bottle, from trade with jdskinns. good aroma, sweet, mild citrus, kind of grainy, earthy. tad hazed brownihsn orange color, good head and lace. bitter flavor. medium body smooth oily mouthfeel, bitter finish, not bad, but in the world of IIPA it’s mild. maybe it’s the hops they choose to use or the blend of them, but it’s not a strong scent or flavor,

Bottle. Pour is a clear copper with a nice head and aromas of grain, caramel and smooth citrusy hops. Not a lot of hop punch to the nose, but it comes through interestingly in the flavor. It is sweet, but doesn’t have a syrupy mouthfeel, which allows the orange and other citrus hop flavors to come through. Almost a pineapple and tangerine edge to it.

Tap at the brewery, pours a clear gold with a thin white head, the aroma has a pretty good amount of citrus and grapefruit, smells real nice, the flavor is way sweeter than I was expecting, more malt than hops on the front end and the finish is overally bitter without it being balanced, didn’t come together like I really wanted it to, was kind of let down by this one.

Pours a hazy orange with a big retentive antique lace head. Aroma is sweet grapefruit. Taste is sweet pale malt, caramel, sweet/sour yellow grapefruit and a bit of bitterness on the tongue following the swallow. ABV goes unnoticed. Good stuff!

On tap at the brewery. Pours a clear amber color with a quickly disappearing head. Smells of fruits and pine. Strong smell of apricot. Not as bitter as I would expect for a dipa and much too sweet at the end. Also carbonation is a bit flatter than I like my ipas.

Draft. Pours a clear deep golden light amber color, although I have had it where its quite cloudy. Moderate off-white head with heavy lacing. Solid aroma with floral, lightly fruity hoppyness. Flavor is mildly bitter with a heavy fruity presence. Light to medium in body with a lingering fruity sweetness. Bitterness disappears quickly. One of the better from urban chestnut.

Bottle (no freshness date indicated), but marked as Revolution Series 3. Pours with a very hazy orange hued body with a medium sized, just barely off-white head with decent retention and good lace. Aromas are of sticky citrus, pine, slightly noble, earthy and spicy. Not exactly your typical west coast DIPA hop profile, but not horrible either. Reasonably fresh smelling. Mild ester, lightly biscuity and cracker like malt profile. Flavors are medium bitter and grassy. A nicely warming, bready and biscuity mouthfeel. A touch more yeasty than I would like (both in flavor and in appearance). Relatively clean fermentation profile, crisp finish. Hop flavor shows a lot of sterling (which I like), mild citrus, noble spicy and earthy characters. Bitterness lingers a bit more than I would like. Not a bad beer at all, well made, but not exactly my favorite hop profile for a big hop bomb of a beer.
