Cada botella se elabora con el mosto fermentado de 20 manzanas seleccionadas en la finca de El Rebollar. Este mosto fermenta en depósitos de acero inoxidable durante varios meses y a continuación pasa a las barricas de roble francés, las cuales le aportan un color amarillo dorado con reflejos cobrizos.

Each bottle is made with the concentrated must of 20 selected apples, fermented at a low temperature and matured in French oak casks for 12 months. Made from apple must frozen post harvest.

Bottle shared by James at tasting at my house. Pours clear gold. Nose and taste of sugared apple, caramel apple, funky apple and iced apple. Medium body. It’s an ice cider. It’s delicious!

375mL bottle, pours a clear dark orange with a tiny head. Aroma brings out apple acidity, light funk, toffee, and residual sugar. Flavour is quite acidic and caramely, with caramelized apples, toffee, medium apple acidity, and brown sugar. Quite sweet, but not cloying. Not overly complex for an ice cider, but still quite nice. Not amongst the elite ice ciders.

Bottle at home. Nose is apple skin and sugar. Pours coppery. Tastes of tart apple skin, brown sugar, honey, oak, molasses, and cinnamon. Dry on palate and not at all cloying despite the sugariness of beverage.

Aroma of dusty, moldy apples. Hazy and cloudy liquid, brown-amber color. Taste of alcohol is very strong, it’s sweet but not tart. Dry palate. Overall: compared to a regular ice cider (Quebec, Vermont), this product is really different, and, to my appreciation, not as good. Maybe it’s related to the kind of apples used and the fact that the juice is not frozen outside during long winters.Typical ice ciders are golden and of clear apparearance, they are very sweet and have a strong aroma of baked apples or sweet autumn apples. I would not recommend this ice cider.

Bottled, thanks fiulijn! Clear pale amber. Oaky nose with a richness of apple aromas. Sweet and full bodied with soft mouthfeel. Mouthfilling flavours of honey and oak, notes of dates. Mildly warming finish with some apple skin bitterness.

37.5 cL bottle. Pours clear and golden orange with no head. Aroma is solid and dry, almost oaky apples. Tannins. Dry, light caramelish. Sweet and almost syrupy. Dry and slight oaky dry into the finish.

Amber color, clear, dark shade but quite bright. Sweet aroma, apple syrup, some wood, honey, very light hazelnuts. Sweet but not syrupy; concentrated apple juice flavor, with a peculiar impression of chestnuts and honey; it has some acidity, but much less than the Canadian Ice Ciders; there are some soft tannins in the end, and a minimal astringency.
Pleasant although still to be improved; at least the price tag is very acceptable! (one point more for this).

37,5cl bottle bought online at Tienda Masaveu Bodegas. Clear orange brown color. No head. Texture is oily. Body is medium. Taste is high sweet, but not that hardcore! Aroma is red apple, wood, pepper, liquorice, alcohol.

375, corked. Thanks c and a! Pours a crystal clear dark gold. Headless and laceless. Intensely concentrated red apples on the nose, like red delicious apples times three or four hundred. Sticky thick body, still. Lots of intense gooey apple flavor, like biting into a fresh crisp pink lady but infinitely more intense. Great cider.

Bottle compliments of James at his January Dad Sess. Pours clear gold with no head or lacing. Notes were heavy oak, sweet apples, skins, rich vanilla, and light cinnamon apple spice. Medium in body. Very nice cider.
