draft. clear pale yellow with medium effervescence. musty malo bacteria nose; fizzy and coarse carbonation; soda-like with mild sweetness and mild must, mild acid and little flesh. comes across like a an indistinct fruit / pear / apple / grape soda, to be honest.

straw with minimal head. slightly sweet, lacking any substantial tartness. dull flavor. seems pretty muted for a cider.

Draft taster at Bavarian Lodge, May 24. Very light color, slight yellowish haze in the glass. a light cider nose overwhelmed by the German sausage platter the lady next to me is eating. First sip has some Juicy Fruit to it. some orange peel. I was expecting a coriander from the wit yeast, but it’s barely noticeable. The apple taste is pretty light, contributing to a very light mouthfeel. You could easily down a lot of these before you knew what hit you. Very light fizz all the way to the end.

On tap at Jerry’s. Pours a near clear pale yellow with a white head that dissipates to the edges. Aroma has a light sweet pear and apple note with a backing light wheat note. Flavor has a light pear note with some bitter apple with a bit of a musty wheat backing. Very drinkable.

Draft. Poured hazy yellow color with a minimal white head that diminished quickly with minimal lacing. Moderate to heavy aroma of tart apple and citrus. Medium body with a dry smooth texture and flat carbonation. Medium sweet & tart apple flavor with a medium sweet finish of moderate duration. My expectations were met.

hazy white color, no head or lace (but it is a cider, not a wit beer).... nose is lemony and fruity. flavor is lemon with a fruity sourness and vineous . notes. tart palate with a dry finish. quite drinkable and enjoyable. rayboy01 provided a sample at a mug club meeting.

RAYBOY01 brought a 750ml bottle (and I thought the label read "Michigan Wit") of this interesting cider to tha last Flossmoor Station mug club tapping. It was fermented with Belgian Wit yeast and pretty much looked like a headless Wit in the glass. It had an aroma and flavor of bready yeast, fresh tart apples, and a twist of lemon. Pretty nice stuff. I wonder if they have a hefe-cider in the works...

UPDATED: DEC 26, 2009 Very unusual pale cloudy pour...even looks like a wit. Smell is really appealing...tart apple, lemon zest, and Belgian wit yeast. The wit yeast is pretty prominent in the flavor, consuming all the available sugars and converting them into fruity, spicy, crisp, dry wit-beer like apple-y goodness. Great experiment and one I will be repeating frequently!
