The apples are handpicked, crushed, and pressed only once. They are then fermented at low temperatures in sealed tanks, creating natural effervescence with no added sugars.

A light sparkling cider with only 2.5% alcohol and an intense bouquet of fresh, slightly sweet apples. A good balance between bubbles, natural sugars and acidity makes this cider unique.

Bottle (750 ml). Split 4-ways. Clear white-ish golden with a foamy quickly vanishing white head. Aroma is of fresh McIntosh apples along sugary - not artifical - notes and mild grassy presence. Taste is mildly acidic with again fresh McIntosh apples flesh and mild grassy notes. Light body, but never watery. Big persistent bubbles, never too agressive, but giving a nice ample mouthfeel. Apple flesh finish. I was impressed by how present the apple is in this one which is not often the case with low abv cider. This is quite tasty and extremely easy to drink. Good job on the mouthfeel as well, I think there’s not another cidery doing a better job than Du Minot with "bubbles" in Québec. The free 1 oz sample you can get at the cidery won’t give justice to this one, it’s worth buying a bottle to give it a proper try.

(1669-291115)

Bottle sampled at Mondial 2015 with Linh, Ken and Nica. Pours a clear white body with frothy foamy head. Moutheel is thin, dry and lightly tart with notes of green apple skins, fresh grass, white wine and a faint perfume character. Very interesting, but in comparison to some stellar ice ciders, this one takes the back seat hard.

>> Should be a Doux cider, but doesn’t come across as that. This one has almost nothing in common with its Rose counterpart. Clear white pour with soda foam. Odd, leafy nose- raw green apple and grass. Taste brings green apple and white wine acid, almost no sugar surprisingly. Strange that their 2.5% ciders aren’t sweet at all. Not sure how they accomplish this. This one is quite simple and pricey, so wasn’t the type of thing I was after in ice cider land, those the Rose version was pretty yum.

[5247-20130425] Bottle. Intense MacIntosh apple influence on the aroma with a touch of musty old barrel. Clear, light white yellow body with a quick bubbly white head. More Mac apples in the flavour with a nice lasting finish. Medium body. Interesting musty notes throughout. (7/4/7/4/16) 3.8

2013-04-25. Yellow body, musty apple skin aroma. 6+ Sweetish flavour, fruity, relatively mild but impressive for such a low abv product. Average to light bodied palate. Enjoyable. Bottle, sampled at the cidery

Bottle. With a cork that shot right out with such force that I’m surprised there is not a dent in my ceiling. Pours a clear light straw spun gold with a soft white head while pouring, which disappears immediately. Sweet apples on the nose, sugar dipped and fresh. Medium bodied with big thick carbonation, but not biting at all, just mouthfilling. Sweet fresh apples, crisp and clean. Lovely tartness, like a sharp green apple, piquant and tangy. Long gentle acid on the finish. Super easy drinking.

750ml bottle. Vey light pale golden pour, big bubbly head, disapeared quickly. Fresh macintosh aroma, sugary, and sweet, with some floral honey notes. Slightly tart, very refreshing, quite nice.
