Caves is een amberkleurig bier van hoge gisting van 5,8%. Het bier wordt gebrouwen van gerst, tarwe en hop, zonder kleurstoffen of conserveermiddelen en zonder toevoeging suikers. Volgens Alphonse Swartelee, brouwmeester en bierhistoricus, zou Caves van alle heden gebrouwen bieren, waarschijnlijk het meest het middeleeuws bier benaderen: zoet en zuur.

Pours to a lightly murky reddish-brown body with a creamy white head. The aroma is balsamic vinegar and olive oil that’s been soaked up in french bread. The flavor is similar to the aroma. Apples, caramel apple dip, balsamic vinegar, olive oil, french bread. Very unique. The palate is vinegar, nice tartness, medium bodied, easy drinking.

Bottle shared by Jason. Clear brown body under a small foamy white head. Funky, musty aroma. Port, wet crystal malt, and some vinegar - interesting! Pretty similar flavor. Starts with a sharp apple cider leading to sweet floral appleness. Sweet ’n sour acid and pale malt finish. Medium mouthfeel.

Thanks SecretSanta! Attractive amber color. Thick off-white head that fades fast into a soapy topping. Aroma is sour cherry sweet bread... a little bit of grapey acetic acid with some sulfur, mold, and urine. Some biting fizziness. Its kind of sweet, with enough acid to back it up. Some stale moldy carbonation, balsamic vinegar, sweet bread... a little rough around the edges, but its pretty good. To me, along the lines of a Rodenbach (well, duh because its a sour), but taken down a notch with slight thinness and very slight cardboard.

clear reddish-amber colour with a persistant little head; aroma of sour red fruits, vinegar and cheese; high initial sweetness fortunately soon followed by a pleasant and robust sourness; the finish is fruity and vinous with more sourish touches - nice to have a Vlaams oud bruin again !

Bottle labeled 15-09-06. Poured a medium and cloudy amber color with an averaged sized, quickly disappearing off white head. Aromas of yeast, cherries, and some other dark fruits. Tastes of dark cherries, yeast and sweet tarts. Medium sweet with a tart finish.

Bottle. Cloudy amber colour with a slim off-white head. Aroma is sour, fruity and woody. Quite a nice sour taste with some complexity behind it; fruity, malty, wood, tart, spicey. Medium bodied, high carbonation. It walks a fine line - but I like it a lot.

Like the aroma, sour cherries, vinegar, and iron. Good looking, too, amber with pink highlights and a sizeable fizzy white head. Light and bubbly in the mouth. Nice and sour without becoming overbearing, it has an iron-like taste with softly tart cherries, light malt, mild fruit tastes, a touch of vinegar, and a hint of citric acidity. A bit thin, but most enjoyable. We need this in the Chicago area.

10oz bottle from Madsberg. Pours a very cloudy light amber color with a small white head. Head recedes to leave a fizzy off white ring around the beer. Nose is pungent to say the least. very much smells like bbq sauce and a great open pit pig roast, then there are notes of soy sauce, teryaki, stuff ive never come in contact with I guess. Taste is somewhat pleasent. Has a very fizzy feeling to it, comes off nice and sour at first, with some good hints of fruit, then kinda goes back to the bad sour and spoiled, over ripe tastes. I love and loathe this beer at different moments. Taste is deffinately semi solid, nose is pungent off and unique, I dont even know where I am ! thanks to madsberg for turning my world upside down...
