Vicaris Winter heeft een roodbruine kleur met een mooi getinte schuimkraag en een vol veelzijdig smaakpallet. Het is gebrouwen met drie soorten mout en twee soorten hop. Het winterbier is het eerste Vicarisbier met kruiden en ideaal om van te genieten tijdens koude winteravonden. Vicaris en version spéciale de Noël, brassée en octobre 2011, donc 2 ans et 4 mois à la dégustation. Il est toujours intéressant de laisser vieillir ce type de bière forte (10 % abv) et légèrement épicée, pour apprécier tout le bouquet. Cette hivernale est faite avec 3 malts, et mérite un verre trappiste pour sa dégustation. Couleur brun profond, quasi noir, mais rousse en transparence (selon un effet assez classique). Bulles moyennes à fines partout dans le verre. Mousse beige foncé qui tient à 2/3 mm, assez crémeuse. Arômes de café, zeste d’orange, pruneau, figue, blé noir, abricots confits. 1ère bouche plutôt souple sur du café fort, avec une pointe de porto et d’anis étoilé. Arrière-bouche assez ample, avec une fine pointe de guignolet et des cerises noires. 2ème avec beaucoup plus de fondu, du cake au café, des prunes, du tabac noir. 3ème au bel équilibre complété par des épices, et un alcool chaleureux. Arrière-bouche plutôt de liqueur de café, mais avec un fond malté torréfié. La longueur a beaucoup de classe, de la force mais aussi de la finesse. La levure est d’une très belle ligne de caractère, rageuse. L’alcool remplit parfaitement son travail d’accompagnement et de soutien. Nous avons vu qu’il était chaleureux dès la 3ème bouche, et il ne faillira pas sur la longueur. La finale est majestueuse, pleine de mystères. Du malt, levure, café, épice, chocolat noir, etc. Conclusion : une très grande bière sur un registre de très haut vol, avec des découvertes constantes à faire. Donc une bière à redéguster à différents âges, dans différentes conditions, etc. Assurément un must...

Pours a cloudy dark brown with an average long lasting creamy tan head with some lace. Aroma is dark dried fruits(dates, resins, plums), brown sugar, caramel, alcohol, light chocolate, and mild roasted malt notes. Flavour is brown sugar, caramel, toast, dark dried fruits(dates resin, plums), alcohol, spicy Belgian yeast esters(mixes well with the mild alcohol warming), mild bitterness and chocolate. Really impressed with this one, we’ll done!

Bottle, shared with my wife. Medium-to-dark brown, chestnut brown I guess, with a lively tan head that retains as a dense pad. Aroma is sweet brown bread, brown sugar, and dark stewed fruits. Bready yeast and sugary dark malts combine with rather intense figs and raisins, ending with light phenols and warmth. Delicious.

7 Beautifully rich mellow roast aroma. Sweet and gently burnt. Later anis and caraway come through quite distinctly.
5 Black, large tight persistent tan head
8 Rich roasty retronasals, pleasantly fruity, some plum, some lighter fruits and lighter esters too. Stands up to the best Het Anker, so full, but so beatufully mellow.
5 Beautiful soft palate, very full, and with lovely pleasnt gentle carbonation.
16 The year of aging has helped mellow this beautifully. So much not a big beer, no hint of 10+%.

Bottle 0,33ltr: Hazy brown coloured ale with an big foamy head, and great well balanced spicy taste. Yes its now in the Netherlands the hottest place in Europe on the moment, but this is an great christmas ale for the eastern times.

Bottle at t’Brugs Beertje, Brugge - 01/12/12. Split with Nutty. 2012 Winter. Very dark mahogony brown approaching black with a mahoosive frothy tan head. Nose is spice, clove, liqourice, Xmas cake, light mint, dark fruit. Taste follows, dark malts, touch of mint, spice, liqourice very evident, touch of alcohol but well disguised, Fullish body with soft fine carbonation, smooth on the palate. Excellent stuff!

Tap at Gingerman. Nice way to finish off sampler on winters day. Pours deep brown with beige head. Nice nose of dark fruits and sweet candies. Tastes of licorice, toffee, spices, light minty, raisins, and resiny finish. Light booze on end delicious

33 cl. bottle @ De Stroopop in Zoersel. 2012 Vintage. Pours a dark furniture brown with a red hue, tanned head. Nose is oxidation (gone well) with some walnuts, spices, touch chocolate, liquorish. Taste is chocolate mouse, lots of fruits, walnuts (pos. oxidation note), sweet liquorish, herbal, touch bark, sweet spices. Body is a touch fuller than usual, nice brew. Wonder how this one compares to a fresh one?

750 ml bottle into tulip glass, bottled on 8/21/2013. Pours slightly cloudy nearly opaque dark brown color with a 2 finger dense khaki head with great retention, that reduces to a small cap that lingers. Nice soapy lacing clings on the glass, with a good amount of streaming carbonation. Aromas of raisin, plum, fig, pear, apple, pepper, caramel, toast, dark candi sugar, light chocolate, herbal, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/earthy yeast ester and dark/bready malt notes; with good strength. Taste of big raisin, plum, fig, pear, apple, pepper, caramel, toast, dark candi sugar, light chocolate, brown bread, herbal, and yeast earthiness. Lingering notes of raisin, plum, fig, pear, apple, pepper, caramel, toast, candi sugar, light chocolate, herbal, and yeast earthiness on the finish for a while. Damn nice complexity of fruity/earthy yeast and dark/bready malt flavors; with a great malt/yeast flavor balance and zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a smooth and lightly slick/bready mouthfeel that is nice. Alcohol is well hidden with only a slight warming present after the finish. Overall this is an excellent Belgian strong dark ale. All around great complexity and balance of fruity/earthy yeast and dark/bready malt sweetness; and very smooth to sip on for the big ABV. A very enjoyable offering.
