COMMERCIAL DESCRIPTION
The pure water we receive from the East Branch of the Brandywine Creek that begins its journey to us just under 14 miles from where we brew with it. We’ll be celebrating this water (insert your lite beer joke here) with our anniversary beer, Headwaters Pale Ale, due to be released February 15, 2011. Now, considering that beer is the product of four simple ingredients and the three other than water rely on water for their existence, we’ve had a fair amount of latitude in paying homage to water in our beer. So, we’ve played all of our cards deftly, bringing the hops, malt and yeast in harmony, with our great local water as the conductor in Headwaters Pale Ale.

A few bottles purchased at brewery back in March 2011. Overall, this was an excellent brew, although it was as hoppy as quite a few of the IPAs out there. Pours with a copper-colored body and a respectable two-finger head. The lacing is fairly tight and sticky. The aroma is surprisingly powerful and florally, with hints to citrus fruits and pine. The taste is simply awesome and relatively bitter, yet the bitterness dissolves quickly in the finish. Flavors like pine and grapefruit accompany the dry mouth feel. Overall, this is a remarkably tasty, aromatic and refreshing pale ale and one that I will certainly enjoy drinking over and over again.

Pours clear copper with a dense off-white head that’s sudsy on the top. The aroma has toasty malt with light caramel, some spicy hops and there is an earthy / woody aspect. Medium body with quite gentle carb. Starts with crackery and caramel malt traits along with mild spicy hoppiness. The finish has a bit of pine and a hint of grapefruit, but it seems like a good amount of hops have fallen out of this even though its a ways from the "best by" date. Decent beer, but I’d like to try it fresher.

12oz bottle pours copper with weak off white head. The modest aroma offers up some sweet malts mixing with lemon and grapefruit like citrus hop notes. The taste is similar with a fairly pleasing level of somewhat acidic citrus hop bitterness with much lesser amounts of sweet malts and a touch of caramel like malts. Nice Pale.

An unmistakeably American-styled pale ale, Headwaters is rife with grapefruit aroma hops. Solid toffee malt backbone carries the floral flavoring hops through to a balanced finish. A hop bomb with dialed down bitterness. Fantastic.

Poured golden in color with a half finger, white head. Aroma is floral, biscuity. Taste is rather plain, but not bland. Bread and grass dominated the tasting. I could see this complementing a variety of summer foods.

The aroma is earth, flowers, caramel. Deep amber, translucent, white head. The flavor is caramel, flowers. Medium in body. The finish is flowers, resin. Decent APA.
