The pure water we receive from the East Branch of the Brandywine Creek that begins its journey to us just under 14 miles from where we brew with it. We’ll be celebrating this water (insert your lite beer joke here) with our anniversary beer, Headwaters Pale Ale, due to be released February 15, 2011. Now, considering that beer is the product of four simple ingredients and the three other than water rely on water for their existence, we’ve had a fair amount of latitude in paying homage to water in our beer. So, we’ve played all of our cards deftly, bringing the hops, malt and yeast in harmony, with our great local water as the conductor in Headwaters Pale Ale.

Cornfield (5570) - Oak Forest, Illinois, USA - MAR 10, 2012
This pours a clear golden body, lively carbonated, with a modest white head. The nose is quite hoppy with scents of pine, grapefruit, and zest... with a dash of butterscotch, sadly. That fades in the flavor, leaving a light grainy malt with citrusy hops and a satisfying level of bitterness. Not bad.

Draft at The Happy Gnome. Pours clear honey-gold, thin white head, great lacing. Nose is tea-like, perfumed hops, very sweet malt, grass, earth. Flavours of mandarin and navel oranges; very mellow, grassy and sweet. Like a glass of melonade; a bit of spice to off-set the melon-rush. A really tasty little brew.

Bottle poured a clear golden amber with a lingering ring of ivory foam. Aromas of biscuit, earthiness, cat piss and light pine. Palate was light to medium bodied and crisp with a dry finish. Flavors of biscuit, earthiness, pine and a hint of grapefruit with a crisp dry moderatly bitter lingering earthy finish.

A game-changer due to the clean, hoppy taste that Victory presents. Different than the usual in your face Victory tastes, but a good different. An organic take on an IPA. GREAT.

Bottle… Florida Craft Beer and Wing Fest 2012… Pours clear and golden with a small, wispy, white head. Good retention. The aroma offers mild grapefruit and other citrus fruit essences. Light to medium-bodied with a mildly creamy mouthfeel and jovial carbonation. The flavor is mainly well-balanced with grapefruit bitterness backed up by biscuit malt sweetness. Finishes crisp and mildly bitter.

Pours an a nice clear amber color with some off white head and good lacing. The aroma has some great herbal hoppiness with a trace of malt which is very pleasant. This beer tastes very good with balance of herbal hops and slight maltiness. A very drinakble beer.

Good solid Pale Ale but, not what I"m used to from Victory. It’s almost too clean for my tastes. Nice crisp start with a little malt and little hops. Fniishes with a nice citrus flavor. Very clean tasting Pale Ale. It feels like it’s missing something to my taste. That said - I’m a Hop Devil fan so take it for what it’s worth. Solid Pale.

UPDATED: NOV 25, 2012 Has a subtile hop aroma floral and piney. The taste starts off like a IPA but then switches to Pilsner. Strong Pilsner sawdust taste finish. I thought this was more of a hopped up pilsner. Was let down by this, I loved every other Victory I’ve tried - Hop devil, Golden Monkey, and Storm King - this didnt stack up.

12oz bottle. hazy copper in appearance, generous white head. citrus and floral hops dominate the aroma with some hints of sweet malt mixed in. pretty hoppy for a pale ale but balanced out by the sweet malt flavor. nice lacing and good head retention throughout the duration of the glass. solid pale!

on tap at buckeye beer engine 19Feb2012, nose is mostly hoppy and the color of the beer makes me think there is more malt here, and tasting reveals exactly that, in true victory form they balance the hoppy nose out nicely with some malt back.. this would do nicely on a brisk spring day.
