The pure water we receive from the East Branch of the Brandywine Creek that begins its journey to us just under 14 miles from where we brew with it. We’ll be celebrating this water (insert your lite beer joke here) with our anniversary beer, Headwaters Pale Ale, due to be released February 15, 2011. Now, considering that beer is the product of four simple ingredients and the three other than water rely on water for their existence, we’ve had a fair amount of latitude in paying homage to water in our beer. So, we’ve played all of our cards deftly, bringing the hops, malt and yeast in harmony, with our great local water as the conductor in Headwaters Pale Ale.

Pours a thin head on a hazy medium straw colored body. The aroma is mild fruit: apricot and some grapefruit. The taste has a solid moderate bitterness throughout with some balancing malt in the middle to end. It finishes with a little sweet note. The texture is crisp with a good fizz. It’s enjoyable and on the more bitter side.

Nice malty/floral aroma, with a cloudy amber color, very little head, smooth light flavor without a bitter hop aftertaste of some pale ales, however a little lighter than preferred. Definitely a summer afternoon beer.

35 cl bottle @ home. Pours clear golden with a white head that leaves some lacing. Aroma and flavour are flowers, caramel, grains, and citrus - with a slightly bitter finish.

On tap at Brewdog, Edinburgh. Pours amber with a slightly off white head. Aroma has light honey, light cats piss, toast. Light to medium body, medium carbonation. Light honey, light caramel, grass, light lemon, grapefruit, light woody bitterness. Nice.

Aroma: hay, floral, resin and spruce - intense hopes. Appearance: dark gold, clear, medium white head. Taste: medium bitter. Palate: very bitter in the finish, strong hops, pine and spruce. Overall: Fantastic in aroma and palate. Bottle from BottleDog Kings Cross, Holborn.

Bottle from BottleDog London and drunk at home. Clear amber lasting thin ivory coloured head. It’s a good looking beer. Some toffee some pepper on the aroma and some grapefruit. Fullish in mouth, caramel, tangerine and grapefruit on the finish. Bitterness is mostly peppery. It’s good. Easy drinking. Very lasting finish. Good APA. Very drinkable but with enough interest to make you think about it a bit more. Very peppery.

Bottle from BrewDog mail-order. Poured a clear, deep golden colour, with a thin white head. Citrus aroma, with some tropical fruits and grain. Initial flavours of grapefruit, toasted malt and juicy hop. Finish was bitter resin, balanced with chewy malt and citrus rind.

Bottle @ BrewDog Manchester. Aroma of basement, vegs, and some hops. Clear light brown with small head which quickly disappears into virtually none. Moderate dry bitterness. Some caramel sweetness. Finish is dry. Texture is watery. Carbonation is average.
