The pure water we receive from the East Branch of the Brandywine Creek that begins its journey to us just under 14 miles from where we brew with it. We’ll be celebrating this water (insert your lite beer joke here) with our anniversary beer, Headwaters Pale Ale, due to be released February 15, 2011. Now, considering that beer is the product of four simple ingredients and the three other than water rely on water for their existence, we’ve had a fair amount of latitude in paying homage to water in our beer. So, we’ve played all of our cards deftly, bringing the hops, malt and yeast in harmony, with our great local water as the conductor in Headwaters Pale Ale.

Tap at RJ. Aroma mostly hoppy, fruity, exotic. Clear amber colour. Stable white head. Taste has high bitterness and quite lots of hoppy flavour. Fruity, berries, grassy. Light biscuity caramelly malty backbone. Overall remains rather dry, thin bodied, easily drinkable, long hoppy finish. Very good. Well balanced.

Looks the colour of money. Deep, honey amber with an oiliness that gives it a radiance when held to the lights. Head is shortlived at its full and resides as a mere ring of white on the meniscus. Nose is all hops and softer esters; piney, herbaceous, resinous and deScriptively bitter with inklings of lemongrass, camphor, damp grass and thorny weeds. Bitter, bitter and maybe a little bitterness on the palate. Bitter lasting finish. Muddled malt amongst grain husks and peanut husks. Weedy and sharp across the length of the tongue. Finish is viciously herbal like hop oils were the work. It is not acrid or heavily astringent which gives it grace just more an assertive beast of an IPA. Wow it leaves the tongue all a flutter. And at 5.2% I am startled at how hard this punches. There is a vinous quality to it late into drinking so I take back that it is not astringent. Definitely a unique pale ale. I enjoyed it and at the same time found it hard too drink! (12fl.Oz, BB 25/03/16, The Liquor Shed, Jandakot)

35,5cl bottle from Coop outside Firenze. Pours clear golden to amber with a white head. Rather mild hoppy and fruity aroma with malt, some floral notes and hints of honey. Medium sweet with a solid malty base and nice hoppy flavours. Finishes nicely bitter. Nice and easy to drink APA somewhat on the sweeter and maltier side, but balanced and nice.

Orangy color with little foam. Hoppy smell. The taste is a bit earthy, lightly carbonated and a little oily in the aftertaste. Not bad, but a little tart.

Deep copper orange color with big head. Aroma is citrusy, spices, caramel. Taste is citrus, a bit zesty, a bit caramel and pine, grapefruit and forest tree, overall rather light, but not watery. Very easy to drink, quite clean taste. A bit underwhelming though, I expected more. Still ok.

Colore ambrato chiaro, carbonazione e schiuma moderate. Odore fruttato, floreale, agrumato. Nota dolce di malto, poi bell’amaro su toni agrumati, molto lungo e pungente. Molto dissetante e beverina.
