COMMERCIAL DESCRIPTION
Malt beverage aged in Oak Bourbon Barrels. The spirit of St. Otto of Bamberg inspired us to create a smoky, Belgian-style dubbel ale featuring the beechwood kilned malts of his home. As we feasted on the deep, exotic flavors within our creation, the German bischop’s siren song once again tempted us. The whispers of St. Otto’s ghost, combined with our enjoyment of that ale, lured us to go a step further and age our Otto Ale in once- used bourbon barrels. What has emerged certainly tastes heaven-sent to us!

Dark brown pour with fair khaki head. Smells and tastes extremely peaty. WONDERFULLY PEATY! Roast and very faint smoke on the nose. Flavor is where the vanilla and oak aging comes in. A little dogfoody even. Very earthy peatiness on the finish as well. Nice warming going down. Really enjoyed this.

Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Léger goût de fumée et de vanille. Durée moyenne de l’arrière goût. Palette: Le corps est moyen. Nice malty, grapey, smoked ham, and alc. Off white head and nice brown body with nice orange golden highlights throughout. Nice crisp smoke and spice flavors and slight fruit notes at the end. Smooth crisp clean on palate.

Bottle @ home. Pours lightly cloudy brown with a medium, frothy light tan head, short retention with light lacing. Aroma is caramel, cookie, and toast malt with smoked meat and malt notes, dates and figs with a light peppery alcohol nose. Flavor is malt and smoke forward with dark dried fruits, light hops and bitterness with a sweet finish. Full body and medium carbonation.

UPDATED: MAY 15, 2013 Aromas of raisins, figs, rum, smoked ham, hazelnut, molasses, subtle cocoa, and a hint of booze. Ruby-bronze with mostly lasting, light tan head foam. Dry, fruity, smokey, spicy, savory, a little hot, and with milk chocolate flavors right at the end. Medium body, moderate carbonation, very smooth, and finishes with wonderful woody, earthy, and dried fruit flavors. Awesome.

A bit of a hybrid beer Otto in Oak is a smokey Dubbel with a balance of yeast and bitterness. Ample amount of oak flavor in this well done smoked Belgian style from Victory.

From notes: Poured hazy nut brown with a touch of orange, and a 1-finger tan head. Woody aroma with a light smokiness and a bit of malt sweetness underneath. Medium body with a mild thickness and a touch of dryness to the finish. Mild smoky flavor, with a solid woody note underneath. Some stone fruit sweetness in the base as it warms.

My Bottom Line:
Wooden smoke, cherry-covered chocolates and vanilla intelligently approach resinous hops in this creative concoction.

Further Personal Perceptions:
-A sheet of foam covers the reddish brown.
-Resinous hops become apparent in the finish after a few sips.
-Smoke is very well integrated to the full flavor profile, as are bourbon notes.
-Mouthfeel is creamy yet never heavy.
-I get the impression that if I get a second bottle, scores will go even higher.

Pours a hazy deep copper mahogany with a spotty-lacing off-white head. Has a sweet dark caramel malty nose with a touch of light fruity esters and bourbon oak. Starts with good fullness and smooth toasted caramel malty sweetness with some light fruity complexity, vanilla oak, and a touch of black pepper before a drier bittersweet finish. A unique and well-balanced brew.

Bottle:   Deep caramel, moderate frothy beige head, spotty lacing.   Musty nose, slight oak and smoked malts.   Has a slight dark pitted fruit tinge as well.   Seems likes like a Smoked Dubbel.   Sweet musty smoked malts up front, a bit fruity.   Body and mouthfeel are moderate.  Maltly finish, subtle smoke, a bit bready, fruity, caramel, and a big dose of mustiness.   Smoked Dubbel is what I would dub this one!   Not as smokey as I would have thought.

Pour on tap at Mayor of Old Town, dark brownish pour with thin tan head, aroma brought notes of nice caramel, toffee, red fruits, nice vanilla, bourbon, hints of oak, touch of nutty notes, hints of spicy and yeasty notes as well. Taste is a nice mix of caramel, toffee, molasses, touch of earth, nice vanilla, oak, sweet bourbon, going into some cocoa powder, finishing fairly sweet, slightly bitter. Pretty nicely done.
