COMMERCIAL DESCRIPTION
From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Long, cold aging mellows the strong temperament of this subtle beer. Celebrate the end of winter with a warming draft of St. Victorious Doppelbock!

Bottle. Very satisfying. Hoppy aroma, average carbonation. Well balanced mouthfeel; good but not overwhelming hop flavors. Slightly bitter finish. Very drinkable; belies its high ABV.

On tap at Joe Canals West Deptford.
Appearance: The body is crystal clear with a beautiful copper hue. The head is tan with a decent size, but rather poor retention.
Aroma: Burnt caramel comes to mind first with a hint of fruit that I can not pinpoint.
Taste: Taste of burnt malts is throughout with caramel, and fruity notes that get stronger by the finish of either red apple or raspberry. The finish is quick and dry.
Palate: Medium bodied with light to moderate carbonation.
Overall: This is decent, but the burnt flavors overpower the rest.

Draft at lucky lab. Pours clear reddish copper with minimal head. The aroma has some smoke, caramel, light floral notes. The taste has a big smokiness and some hickory, smokiness. Nice!

On tap at the Thirsty Monk. Dark copper color, with a small, beige head. Caramel, syrup, earthy hops, and some pine. Faint notes of smoked meats. Very sweet at first, with a rather forward hop bite toward the finish. The result is a nicely balanced, sweet, bitter, and spicy flavor. Medium to heavy body, with a lively mouthfeel. Overall, this is a very good American Doppelbock. Nicely hopped, without overwhelming the malts.
