COMMERCIAL DESCRIPTION
From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Long, cold aging mellows the strong temperament of this subtle beer. Celebrate the end of winter with a warming draft of St. Victorious Doppelbock!

Best by Dec 2011. Poured from a 12oz bottle into a wine glass. Pours a purpleish brown. Not much head and zero lacing. Mild fruity aroma. Mouthfeel is pretty flat and dull. Little carbonation to liven things up. Taste is pretty flat too. Dark fruit, banana, clove, some alcohol and little else. I’m not a big fan of bocks and this didn’t to much for me either.

aroma, roasted malt,faint hop aroma flora,carmel toffee notes, deep dark reddish hue, taste, the roasted dark malts add a toffee and carmel note, sweet dark bread notes and some dark fruit as well,overall, A good Doppelbock, rich deepness from the roasted malts, adds depth to this brew!

UPDATED: DEC 11, 2011 Victory at it best again, one of there best beers. It?s a light brown with carmel color in the light. It has very little head but the aroma is great and only gets better as it warms. Caramel, coffee, and a little hoppy. I always have this one around. It?s a little high in cost per case, but well worth it.

Mostly brown with copper undertone, thin off white head. A sweet nuttiness in the nose, roasted malt background. Medium in body with a somewhat creamy texture. Slightly more hoppy/bitter then expected with an almost coffee like finish.

Bottle; Pour is dark brown / ruby with a bubbly beige head that retains quite poorly in this dimpled mug. The nose is chestnuts, caramel. and baked breads. The flavor profile , i had to honestly ’warm up’ to. It’s nutty, with sweetness in abundance (caramel, brown sugar); but it was a little bitter and buttery out of the gate. As I alluded to , that improved,and actually dissipated into a nice doppelbock that works fairly well.

Tap. Clearer ruby orange-brown with a slightly tan head. Nutty and toasty, lightly sweet with a touch of roast in the aroma. Light smoke in the flavor that comes in alongside the darker fruit and toffee notes with some cherrywood. Medium body with very bubbly carbonation. Pretty nice.

Bottle. Mahogany with close to no beige head. Aromas of caramel, roasted nut, smoke, bread. Flavors of caramel, roasted nut, smoke, bread. Slightly sweet finish. Medium full body with soft mouthfeel and low carbonation.

Rosted malt and honey aroma. A strong presence of sweet brown sugar, roasted malts and hop in the taste. A good warm and dry finish. I liked it.
