From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Long, cold aging mellows the strong temperament of this subtle beer. Celebrate the end of winter with a warming draft of St. Victorious Doppelbock!

Best by Jan 22 2008 Pours a very attractive copper tinged brown with a thick two finger head that fades slowly to a solid cap. Despite the significant foam topping this, the lacing is minimal. Smell; sweet caramel and brown sugar up front, followed a nice toasted biscuit aroma. There’s also a slight fruitiness in the background with a touch of figs or maybe dates. Taste; the brown sugar and caramel follow through to the flavor, as well as the toasted biscuits and a little herbal hops. The fruits are more defined in the flavor with dates coming through very nicely, with a hint of raisins. Mouthfeel is medium to full bodied with a low carbonation, giving this a nice smooth creamy feel, and the drinkability is really good. If not for the high abv I would be able to have a few of these in a row.

12/5/2014. On tap. Redbrown with a tan head. Fruity and malty aromas with caramel and earthy notes. Sweet, mellow flavors, fruit, caramel and light hops.

On tap in sampler at the Downingtown Brewpub. Pours brown with a off white head. Malt aroma with smokiness. Flavor starts caramel maltiness with dark fruit flavors and some nice smokiness. This is a really smooth beer.

On tap at Downingtown Brewhouse. Aroma is so smokey and delicious with tons of roasted malts. Not bitter by any means with a medium body. Finishes rather wet and long.

On tap @ Top Hops NYC. Pours a hazy brown with tan head. Aroma of dark malt, light smoke, ash, light caramel. Flavor has notes of mostly the same, smoked wood, deep malt, caramel. Mostly toasted malt start to finish.

On tap at brewpub. Amber pour with white head. Smoke, caramel, citrus, pine. Medium sweet and bitter. Medium bodied. Light crispness. A little sticky. I liked this quite a bit more than I expected to.

Draft at Good Beer NYC. Pours brown with a khaki head. Doesn’t leave much lacing. Lots of caramel on the nose and tongue. Hides it’s alcohol fairly well. Solid.

Bottle. Very satisfying. Hoppy aroma, average carbonation. Well balanced mouthfeel; good but not overwhelming hop flavors. Slightly bitter finish. Very drinkable; belies its high ABV.
