I guess that is expected from a bottle brewed on August 10, 2006. More bitter and sweet on top, just like a fresh Dogfishead 120 Minute IPA. I couldn’t wait a few years for this one to mature, so I indulged in all of its fluid ounces tonight. Sweet and mildly complex. Not too much to this one. Not many fruits or nuts attributed, however, this may be to fresh age. A decent attempt to a Belgian Trappist, but it still has a looonnngggg way to go. Pours a translucent copper/amber with a large frothy off white head that laced and sustained as a smaller creamy head. Aroma of dark fruits, molasses, green apple, candie sugar, caramel and alcohol. Flavor of dark fruits, caramel, toffee, Belgian yeast and candie sugar with hints of alcohol. Even after close to two years this still has some noticeable hop bitterness. after4ever (2711), Brier, Washington, USA
| 4 | Aroma | Appearance | Flavor | Palate | Overall | | 9/10 | 5/5 | 9/10 | 5/5 | 12/20 | Nov 1, 2006 750. Pours hazy dark amber with a moussy off-white head that falls quickly and leaves no lace. No visible carb after a few seconds. Big green apple nose.Slight candi sugar there too. Big tart green apple attack; medium body with sharp fizz. Almonds, raisins, burnt toast and some resin at the finish--but the flavor’s a lot more satisfying than the sum of these meager nouns. A little boozey and bitey at the end, but time would take care of that. This is worth cellaring. Nice stuff. OhioDad (2491), Hilliard, Ohio, USA

This beer is much better with food. I recommend a Tombstone Cheese pizza. I probably like this beer more than it deserves. I’d like to see how it ages. Bockyhorsey (2511), Mesa, Arizona, USA

Was visiting Wis last July and was at Discount Liquors in Milwaukee. The wife and I spotted this one on the way to check out by registers. Well I was telling her we already had a lot of beer to send back to AZ and a 750 bottle like this would be in my carry on already going to be heavy. Well glad she convinced me to get. It was good and was looking for a beer in the house to toast the Detroit Tigers for beating the Yankees and sending their sorry team back to New York. Thus a beer with VICTORY was just the right one to have.
Mild fermentation of fruit, caramel and grainy aroma. Body color was a murky caramel with tan beige head that settled to a creamy cover on top of body. Mild Lacing. Flavor was little over sweet but had a creamy texture of caramel malt and a mild zesty bitterness to balance it out. Big yeasty sour shot of alcohol in the end. Smooth on the palate with an alcohol warming effect on the body. Great brew, glad the wife talked me in to picking this one up.
