Bold, spicy, menacingly delicious HopDevil takes on an entirely new dimension when subjected to a wild yeast fermentation. A sharp, sourish edge has been added by this fermentations that plays into the caramel sweet malt deliciously and creates complex interplay with citrus accented hops.
Originally made in 2008-9, remade in 2014.

Mid-hazed amber under soap-suds of off-white. Floral/yeasty aroma... violet, wildflower, bread dough, lemon... sharp. Long-lasting hoppiness to the flavor with a tart, yeasty linger. Alternates with a peppery bitterness. Just above "mid-bodied". Alcohol dryness. Well-put-together. ~~~~~~~~ Rating found in an old notebook. Several draught pints at Victory brewpub in 2008 or 2009.

Frfom a 75 cl corked and caged bottle. Pours a clear copper with a thick and frothy off white head. Grassy nose. Flavors of tropical fruits, butterscotch and tart lemon. Tart, bitter finish.

Bottle to glass. Maybe a bit old, as it was bottled in June. Pours mostly clear amber copper color with a light tan head. Aroma is faint, slight tart, heavy belgian yeast. Flavor is wild yeast, light caramel sweetness, earthy funk, hint of tartness. Funk wild yeast lingers in the palate. Not overly impressive.

2014 bottling. 3 months old. Pours a hazed amber with a large head. Bottle gushed just a bit as I opened it... I wouldn’t sit on this for very long or you are going to be losing a shit ton of beer upon opening it. Aromas of moderate funk, some toffee and floral notes. Taste is bretty funk with a touch of barnyard, pretty damn dry. Flavors of spicy brett, nocturnally produced guano, freshly picked dandelions. Pretty deep and complex. This is nowhere near an ipa, it’s a brett inoculated funky train that goes all the way to crazy city. Very well executed Brett beer. Love it.

Tap from Maltitude. Pours dark amber with frothy white head. Aroma of funk, apricot, and spicy and floral hops. Flavor is sweet and hoppy at first, followed by a tart and funky aftertaste that lingers on the tongue. Medium bodied. An interesting mix of IPA and sour. A different beer. I liked it.

A great twist on one of my favorite beers. The addition of wild Belgium yeast to hop devil creates exactly what you would think, slightly more creamy and smooth which compliments the hop devils powerful malt, caramel, pine and citrus. The color remains a beautiful orange mahogany but with some added cloudiness. Overall a great beer for the hop enthusiasts.

Mini growler from beer table pantry. Pours a deep amber orange, big off white head. Aroma is funky apricot, barnyard, Brett, spicy floral hop, sweet fruit / cherry. Flavor is sweet up front, then light hop, ends tart and funky with an underpinning of bitter hop. Medium body, pretty interesting mix of hop and sour flavor... Big on both hops & Brett. Very complex palate, enjoyed trying.

Clear brilliant copper under a thin foamy cap. Funky hoppy nose of earthy barn hay and toffee and an earthy grassy hop. The toffee is heavily pronounced in the flavor with a very gentle brettiness, a certain drying barn hay tone, and a gentle dry earthy floral hop finish. Very flavorful, interesting what Brett does to this hop monster.

Victory Wild Devil Ale is hard to describe. Funky aroma coming off a beet red pour and a thin off-white head. Taste is very funky, a little sour with a bit of an aftertaste. Lots of complexity there, so the flavors are hard to place. Nicely balanced malt and bitterness. Wild Devil is sure to fool you. I may have to update this after second tasting.

Poured into a tulip out of a 750ml bottle. Pours a clear dark copper with a nice one finger off-white head. Very good head retention with a solid ring of lacing all the way around the glass. The aroma really shows off the Brett with the telltale barnyard and earthy notes present in a wild ale. There are also some piny hop notes and a good shot of bready malt. Really nice. The flavor takes all of the characteristics present in the aroma and bumps them up another notch. Once again the Brett is the first thing to really come through. Hops follows closely behind with pine and earth before the malt comes rushing in. This is a beer that really has it all. Nice drying bitterness on the finish as well. Overall, I love how there is so much going on here but it all works. A wonderful combination of flavors with nothing off-putting whatsoever. Definitely one to pick up should you come across it.

From a bomber. Pours an orangey-gold. Makes a thin off-white head that creates a bit of lacing. Smells of citrus and gardenias. This is a milder, despite the name, version of hop devil. The hops create balanced bitterness, but it doesn't overpower. Tastes of caramel and hops. ---Rated via Beer Buddy for iPhone
