COMMERCIAL DESCRIPTION
Long ago, it was easy to keep track of where our food and drink came from. If we didn’t raise it or harvest it ourselves, another local farmer did. Virtue Cider preserves this local connection with every cider we make, partnering with area farmers in their second, third, and fourth generations.

Virtue’s Estate Series ciders are a salute to our partnering farmers. Each cider represents a true expression of a single grower’s finest fresh apples, with little impact from yeast, and fermentation without barrel aging. Throughout the season, each release will showcase a partnering farm and the apples that place Michigan’s Cider Coast among the best growing regions in the world.

Estate Series #1 - Apples sourced from Nicols Farm & Orchard of Marengo, IL - A mix of Nichols’ early season, high acid apples, highlighted by their flavorful, floral Cox’s Orange Pippin. The result is a bright, funky, sparkling dry cider with moderate tannins—a colonial farm cider fitting of our first Estate Series blend.

Bottle. Pours with a crystal clear pale yellow hued body with a white head that fizzes away. Aromas are of earthy and slightly funky fermentation notes, light sulfur, a touch of rubber. Grassy, juicy apple character, smells high tannin. Flavors are dry, medium tart, and somewhat tannic. Bright carbonation, some funky notes, light orange, grass, tannin, doughy, light sulfur. Sharp and distinct with acid and tannin. A bit carbonic. High carbonation, dry finish.

Bottle. Pours a clear gold with visible carbonation that does not form a head. Aroma has a good amount of sweet apple with a hint of earthy dryness backing. Flavor more of a sweet and slightly tart combination with a hint of dryness.

Bottle. Poured clear pale color with a minimal head that diminished slowly with little lacing. Medium floral apple aroma. Medium body with a smooth texture and soft carbonation. Medium tart apple flavor with a medium sweet finish of short to moderate duration. Solid drinkable refreshing beverage.

750 ml bottle shared by Tmoney99. Pours a pale yellow color with some minimal bubbles. The aroma and flavor have sweet apple notes that did end up carrying a tart character, some funky notes, dry with a mild floral component. A little more going on than most ciders, but still not my thing.

750ml bottle, thanks to tmoney99 for sharing (from Dutch’s). Clear pale yellow color. Minimal ring of white head. Crisp yellow apple aroma in the nose. Very nice big fresh golden apple smell, hint of green variant. Indeed, a lighter tart taste, moderate sweet. Moderate lighter crisp, lighter carbonation. Medium-plus body. Just a very slight slickness in the finish, nice mild dry. Solid, tasty cider.

750 ml bottle to snifter (shared by Tmoney99). Looks solid; a transparent light gold with thin head that dissipates quickly and completely. Smells solid too; apple cider with a bit of earthiness. Tastes like it smells, but unbalanced. Almost salty. Average (at best) on the palate. Not their best stuff.

UPDATED: MAY 4, 2014 bottle. pale golden with minimal head. quite tart with some champagne/winelike characteristics. some light barnyard funk as well. dry finish. surprisingly light on apple flavor.

750ml from Binnys South Loop (Chicago, IL). Newest from the guys at Virtue. Pours a nice deep striking golden hue, champagne, touches of cider and harvest gold. Pretty much transparent, bubbly vibrant life filled body. Gentle whitish head atop dies down to a skant ring, laces minimally. Aromas are fairly sweet, juicy fruit, ester, touches of bubblegum meet some yeasty life, touches of brut and dryness, some gentle apple, straw, and mellow white grape. Subtle gentle tartness, dryness and decent sweetness. Initial is lighter end of the fold, some prickly carbonation, gentle yeast. Firm juicy red and green apples mingle, decent dryness and slickness, subtle bubbles grow. The yeast and brut like element dries out more on the backend. A bit dry, smaller quite drinkable body with that decent brut and bubbly, some slick apple juice, more dry and well attenuated with some gentle appleskin, a touch tannic. Potent fleshy apple nose and brut elements are quite nice and enjoyable, perfect for this spring day. A gentle yeastiness, subtle spice and lingering apple elements stick on. Smaller body makes this go down quite well. Really well put together, flavorful, tasty stuff. A little sweet on the nose but the cider itself comes together pretty well.

[Tap] Draught at Farmhouse in Evanston. Pours a very light yellow color that is almost clear. Lively carbonation. Tart apple aroma and taste. Sour and dry finish. Light vinegar and earthy/grassy notes. Crisp palate. A good cider.
