Clear straw, gold. No head. Musty, earthy, light fruit. Dry upfront, some touch of bitterness, and some sourness. Relatively clean, a little bit of chewy. Nice.

This one’s pale, bright yellow... what an oxymoron. Look for faint white bubbles on the rim of the glass. Bonus points if you can find them. It’s thin like water. The aroma is salt and has a pleasurable complexity. I want to rate the appearance lower for lack of head but it’s cider and the visuality of the texture is complex, therefore unique, therefore intrigueing. The flavor is dry apple pulp but all over a wet palate. Go figure. The apple stock seems of high quality and the dryness will.l make you white wine wimps wail. Enjoy, because why not?

Tap at Capitol Beer and Taproom in Sacramento, CA. Pours pale yellow. Aroma is cider with an oak note? med minus body. Flavor is dry/tart and a little oaky. Finishes dry, tart, apple, astringent, oak. Very nice.

On tap at Mash Tun Festival 2013. Pour is translucent peach with no head. Aroma is of oak, candied apples, caramel, and resin. Flavor is white wine, apples, earth, wood, and yeast.

On tap at Lincoln Hall, Chicago. Dry and a bit tart, but not too heavy handed on the flavor. Good, but still very mild cider. Still way better than the overly sweet ciders that are so common.

Pale gold with light, fine-bubbled, white head / Elegant, clean nose of oak, cream, resinous, and subtle candied orchard fruit / Medium body, fat from low carbonation, modestly sweet, with good balance and some dryness on the finish / Flavors of candied pear & green apple, dry cheese, straw, and oak / Terrific flavor profile and balance, but think just needs a little more zip to the carbonation.

Sampled at the 2013 Chicago Cider Summit. Pours a clear peach like color with no head whatsoever. Aroma has a farmhouse note with a bit of a wine note and extremely dry wine. Flavor has extremely dry apple but is over all a bit thin.

This seems to be a "hit or miss" cidre. People I have talked to either love it or hate it. I love it. It is very reminiscent of the old world style of cidre. Straight aged apples in wine casks, no other ingredients. Dry, with champagne notes to it. I like the unfiltered aspect as well. Much more straight-forward than many of today’s bottled cidre. You can only find this on tap.
