Introducing Lapinette, a Norman-style cidre brut, aged in French oak barrels. Reminiscent of the old days in France, before the great wars, when wine makers of the south shared their used barrels with their northern cousins, the resulting ciders were a little bit rough, unfiltered with a balance of flavors from the fruit, the farm and the barrel. Virtue has recreated this traditional cider by sourcing tart fruit, patiently aging for months in wine barrels, and serving as is, without fine filtration. Lapinette is a window into our past, a very tasty time indeed.

Pale gold with light, fine-bubbled, white head / Elegant, clean nose of oak, cream, resinous, and subtle candied orchard fruit / Medium body, fat from low carbonation, modestly sweet, with good balance and some dryness on the finish / Flavors of candied pear & green apple, dry cheese, straw, and oak / Terrific flavor profile and balance, but think just needs a little more zip to the carbonation.

Draft at FoBAB. Awesome first go with this one. Pours a pale water white with fizz on top. Nose is really nice. Fresh apple with some light vanilla and oak spice. I was afraid that the bareln would overshadow this but it works great here. Moderately sweet and apple forward with a nice tannin structure, both from the oak and the apples themselves. Fresh and floral. Superb stuff, can’t wait to hit it again!

UPDATED: DEC 11, 2012 Draft at Haymarket. Pours like hazy water. Aroma cheese, wood, green apple. Flavors are tart green apple, dry oak, minerally, white grape, dirt, long tart finish, very clean and crisp. Body is very light. Refreshing. 3.8 Sampled a few more times and next to Red Streak. I found this to be a lot more refined and the oak aging is brillant. very good stuff and easily above Red Streak.

Draft on tap at Little Goat (Chicago, IL). Finally a chance to get at this with the missus. Cheers! Pours a nice hazy straw hue, champagne colors and haze, gentle carbonation with a frothy white head atop that dies to a ring, laces small. Aromas are champagne, gentle white wine, white grape and oak, touches of gentle yeast, dryness. A plethora of white wine and champagne feels keep me into it. Richer dry and yeasty feel, white grape, gentle apple. Initial is bright and vibrant light bodied and well carbonated, the champagne element shines on the palate. Dry, richer white grape, gentle apple, and mellow sweetness meets dry, richer carbonation, yeast, and Champagne feel. Middle is more mellow, gentle apple, white grape, oak, a touch of pear. Mellow, dry, touches of fruit jab a bit. Backend is dry and light, champagne yeast and gentle dryness, a touch of grapeskin and apple sweetness. This cider is very well put together, dry and yeasty, gentle jabs of white wine, grape, and apple. Mellow, dry, and light. Just an impressive beverage. Well done!

This seems to be a "hit or miss" cidre. People I have talked to either love it or hate it. I love it. It is very reminiscent of the old world style of cidre. Straight aged apples in wine casks, no other ingredients. Dry, with champagne notes to it. I like the unfiltered aspect as well. Much more straight-forward than many of today’s bottled cidre. You can only find this on tap.

UPDATED: NOV 16, 2014 750ml bottle. 2013 harvest. Hazed pour with large bubbles. Nose is tart and sour smelling, some tropical and citrus notes. Falvor is great, earthy, some spice, dry oak, tartness, bittersweetness. Very dry and decently tart, really nice one. Edit: dried a draft pour of this beer and it smelled like filled improper diet baby diapers so proceed with caution.

On tap at Hopleaf. Pours a hazed, golden-white colored body with a thin, fizzy, white head that dissipates quickly and leaves no lacing. Aroma is really nice. Fresh, tart apples with dry oak, white grapes, and just a touch of sweetness. Flavor is similar. Clean, tart green apples with a nice oak presence, a very slight sweetness, and some white grapes. Finishes very dry, pleasantly tart, and crisp before leaving a medium length aftertaste. Light and clean body with a crisp, refreshing carbonation. Overall, a pretty solid cider. Tart and dry with a nice oak presence. I liked this a bit more than the Red Streak.

This one’s pale, bright yellow... what an oxymoron. Look for faint white bubbles on the rim of the glass. Bonus points if you can find them. It’s thin like water. The aroma is salt and has a pleasurable complexity. I want to rate the appearance lower for lack of head but it’s cider and the visuality of the texture is complex, therefore unique, therefore intrigueing. The flavor is dry apple pulp but all over a wet palate. Go figure. The apple stock seems of high quality and the dryness will.l make you white wine wimps wail. Enjoy, because why not?
