COMMERCIAL DESCRIPTION
Ledbury is an old market town in Herefordshire, England – full of historic inns and pubs, and a beautiful, half-timber Market House dating back to 1617. It sits between the rivers Wye and Severn, surrounded by orchards growing cider apples. My first visit to Ledbury was as a brewer, to buy English hops in the autumn of 2007. I returned in 2011, a newly minted Cider-maker, to meet Tom Oliver. Tom makes traditional cider and perry in Ocle Pynchard, Herefordshire, to my palate among the very best.

The Ledbury Cider is an English-style medium cider – not too dry, not too sweet. A blend of old world bittersweet apples and new world heirloom varieties are fermented with native yeast, adding a bit of farminess to the ripe apple nose.

UPDATED: JUN 27, 2014 bright pour, short of vibrant. Fairly full nose, lemon and a leathery bittersweet apple skin character, hints of the barn, some alcohol but nothing fusely and overall quite a full, complex structure. There’s mouse here, but by a factor of 4-5 or so less than my last experience with this cidery, and this level won’t bother many. Going beyond the rodent cage there is a nice mix of soft astringency and a harder bitterness, without being harsh. Some green apple and a bit of harsher alcohols but fairly faint. Nice expression of the apples with only a hint of overt fruitiness. Could be great...

On draught at 2014 Cider Summit PDX. Clear golden color. Semisweet apple aroma. Taste is slightly herbal and tart apples with pronounced dryness. Bittersweet finish.

Bottle thanks to Adam! Pours a hazy gold with a bubbly white head that starts at the edges and dissipates immediately. Aroma has a good amount of dry apple with a hint of light tartness. Flavor has a similar note of dry apple that combines with a light tartness in the finish.

Draft at Torst with Linh, Paul, Max, Jess, Jeremy and Karen. Pours a clear golden honey body with no head or lacing. Aroma is sharp floral sweetness and light apple. Mouthfeel is super dry with flavors of honey, apple, white wine and a super dry finish.

Draft at Jerry’s. Brilliant gold with light white head / Stylish, mostly dry nose of green apple, light resin / Light body, a hint thin, soft carbonation, tart, lean with moderate sweetness / Clean, fermented flavors of red apple with notes of honey, yeast, and resin / The body is just too weak from this fine cidery. Maybe fixed on next batch?

750 ml bottle. Pours a bright golden color with visible carbonation and no head. Aroma of barnyard, cheese, tannic notes, and earthy apple notes. Flavor is mildly tart with a refreshing sweetness. Slick bodied, lively carbonation finishes with a hint of tartness. Nice.
