COMMERCIAL DESCRIPTION
Ledbury is an old market town in Herefordshire, England – full of historic inns and pubs, and a beautiful, half-timber Market House dating back to 1617. It sits between the rivers Wye and Severn, surrounded by orchards growing cider apples. My first visit to Ledbury was as a brewer, to buy English hops in the autumn of 2007. I returned in 2011, a newly minted Cider-maker, to meet Tom Oliver. Tom makes traditional cider and perry in Ocle Pynchard, Herefordshire, to my palate among the very best.

The Ledbury Cider is an English-style medium cider – not too dry, not too sweet. A blend of old world bittersweet apples and new world heirloom varieties are fermented with native yeast, adding a bit of farminess to the ripe apple nose.

Light straw color. Some yeast in the aroma and flavor. Dry, not a lot of apple flavor or sugar; lack of sugar is fine. Very light palate and not a lot of flavor or aroma.

Pours a clear golden color with bubbles coming up from the bottom. A little funky, apples, and what I would call typical cider notes; follows onto the palate. Finishes dry and not too sweet. A cider I could drink.

The aroma is dry and slightly fruity with some funky yeast. The appearance is golden with no head. The taste is like the aroma. The palate is thin. Overall not enjoyable at all.

[6268-20140419] Tap. Harsh apple skins aroma. Clear, pale yellow body with no lasting head. Apple woody fruit flavour. Medium body. I prefer sweeter but this is OK. (6/3/6/3/12) 3.0

750ml bottle, thanks to Jay A. for sharing. Clear golden, slight orange color. Thin ring of white head. Loose dots of lace. Apple aroma, kind of oaky, mild white wine flavors. Moderate sweet taste, light tartness to it. Lightly slick texture, kind of a nice, dry finish. Pretty nice moderately dry english cider.

Sample at Mongoose vs Cobra. Bright golden color with a minimal white head and spotty lacing. Apples and sweet spices in the nose. Medium body with an apple cider character and notes of cinnamon and honey. The finish is fruity with a mildly tart apple aftertaste. Decent overall.

750ml green bottle. Pours a perfect apple juice color with bobbles, and even a bit of a head. Smell is earthy, funky, yogurt, some floral notes. Flavor is dry, lots of tartness nad even sour acicity, lots of earth and skin, nice prickling carb, harly any sweetness, some medicinal.
