750mL Bottle poured at CiderDays 2012. Aroma gives a distinct nose of Swiss cheese rind. This is odd. The character is unique and really interesting set of savory and sweet flavors, but the overall balance never comes together in a snappy way. I appreciate trying the flavors that come out of these single varietals, but I can’t get into the fact that they don’t hold the whole package together.
