COMMERCIAL DESCRIPTION
Reine de Pomme, an old French cider apple, is blended with Dabinett, Baldwins and, Catamounts to make a full-bodied, distinctively tannic and darkly fruity hard cider. As in the traditional French style, no sulfites are added and a malic-lactic fermentation takes place in the bottle leaving a tasty sediment.

Pouring at The Festival in Worcester. Pours a clear gold with no head. Soft warm apple, light tannins. Medium bodied, light carbonation. Gentle sweetness, toasted apple. Musky, light apple finish.

750ml bottle. Pours out a crisp pale straw. Nose is green apple pear and sweetness. Taste is as the nose with apple pear and super dry.

mine says 6.8%. orange pour with some haze to it and a lasting head. true apple aroma with hints of cheese.. overwhelmingly great to smell though. taste starts appley, for a second, and immediately lands in bitterville with apple seeds, earth, and a somewhat pleasant finish of brett and alkaline earthiness. the lack of sweetness makes it drinkable, but the super-dry character limits the enjoyability. this is a good cider without off flavors, but it really lacks balance.

750ml undated but seems fresh. 7.3%. filtered clear body with only a ring of soda bubbles on the outer edge of the top surface. direct apple expression in the nose with some minor accents of honey and pear. clean and juicy apple cider smell. light body with medium-high acidity and a calcium / mineral roughness. a minor burst of carbonation across the back coupled with the acidity give the body momentary life, but it quickly turns watery and thin. the effervescence and acidity is nice, but the body seems weak. this reminds me of the sparkling ciders of Spain - filtered, somewhat acidic, good apple expression with touches of malolactic acid, but as a whole it’s pretty basic. i might prefer slightly less acidity and bitter peel character, and a fully texture. after some time I warm up to this one and find the peel malic acid enjoyable, and the body seems to hold up better with every subsequent gulp.

Bottle purchased from a wine shop on the UWS that did a tasting during last year’s NYC cider week. Had a fresher sample during the Shelton/12%, The-Festival thing as well. Missed notes on that one, but it was very much an easy drinker, which I think is what the cider maker’s son is focusing on now. First off, 6.8%. :D This is a blend of Pommes, Redfields, & Dabinetts. Pours out a still, honey gold color, with a persistent ring of head. Smells of caramelized apples; doughy, with a good bit of acidity. Dry, but curious taste. Lots of skin. Bittersweet meat. Grassy/citric bitterness. Low tartness, moderately high acidity. Not too winey. Slight sediment in the feel. Woody, cat tongue finish. Very nice.

Sample poured at THE FESTIVAL, MA. Pours a clear golden amber body with no head or lacing. Aroma is apple, alcohol, and dry fruit. Mouthfeel is dry, medium to thin, with some carbonation and notes of apple, dusty funk and light fruit.

750mL Bottle purchased at CiderDays 2010. Immense fresh apple aroma, backed with acid and crabapples. Stunning ambered peach color. Flavors and textures are just boggling. Incredible, super dry, super tart, super fresh crisp, immaculate calcium love. Flavors run both green and ripe, with noticeable crab-sourness. Intense. Vibrant, fresh, lively. Incredible.

Bottle purchased in Otis. Pours a hazy amber with a fizzy rapidly dissipating head. The first aroma that struck me in this cider is honey followed by an intense astringent light acidic smell that blends incely with some sweet apple aroma. Taste is of dry tarte apples with hints of honey and touches of residual sugar. Mouthfeel is very tingly along the lines of a crisp champagne. Finish is dry and lightly acidic with some citric trace qualities. One of the better local ciders I’ve had.

Has a light amber/yellow color with little carbonation and an apple/light alcohol smell. Taste is light, crisp with a bit of fizz and finishes with a nice dry apple cider flavor. Overall a good cider that I wish came in a bigger bottle.
