Brett/peppercorn saison

Thomas is the third installment in our “Bearded Farmer” series of saisons. In keeping with the farmhouse brewing tradition, the idea here is to brew each successive beer a little (or a lot) differently than the ones before it.

This Saison-style ale uses Pilsner & Munich malts with Wakatu, Motueka & Pacific Gem hops, and it is fermented with a single strain of French saison yeast

CBC. Cloudy gold beer, big ivory white head. Light crispy palate, dry. Good fresh bretty yeast - big time! A little lactose malt and stinging minerals. Dry finish.

UPDATED: JUL 30, 2013 Pours a burnt orange with thick cloud white head. Spicy citrus flavor with a bubbly mouthfeel. Slight tartness on the front end with a smooth dry finish. On draft at Brick Store Pub in Decatur, Georgia.

Bottle from Charleston Beer Exchange. Pours semi-cloudy gold with fluffy white head. Nose and taste of wild yeast, white sugar, Brett, peppercorns,orange peel, spicy malt, aged dried citrus and funk. Medium body.

Bottle from Ale Yeah. Grassy, herbal, aroma. Reminds me of spring. Big gushing white head. I had to give it about 10 minutes to settle down before I could take a sip. Cloudy, murky, muted orange color. Nice effervescence. Peppery spice flavors with a chewy bread and grain malt back. Banana creeping throughout. Finish is long smooth and a little herbal again. Pretty enjoyable.

Bottle, 06/16/2013. Pours cloudy orange, fluffy white head with great retention that leaves trails of lacing as it dies down. Aroma of cereal malts, yeast, herbs with soft floral, citrusy hops, nice orange character. Taste is fruity orange, citrus, brett-like yeast character, moderate grassy, spicy bitterness, pale malts, dry finish. Soft, medium body. Great saison for sure.

Bottle. The nose is sour milk and grass. The pour is a hazy golden brown. The taste is sour with a real nice bitterness. nice medium body and thick palette.

750 bottle. Pours cloudy dark, but bright orange with a giant white head that slowly dissapates and leaves some streaky lace behind. Smell is citrus, spiciness, alcohol, slightly funk, hint of must. Taste is soapy fruit, tad funky, citrus, floral, earthy hop bit. Lingering mild bitterness and light tart, but the floral turns a bit cologne like after a bit. That is my only complaint. Lightly dry. I still dig it.

Funky, yeast aroma. Bitterness comes through and lingers through the finish.
