Thomas is the third installment in our “Bearded Farmer” series of saisons. In keeping with the farmhouse brewing tradition, the idea here is to brew each successive beer a little (or a lot) differently than the ones before it.

This Saison-style ale uses Pilsner & Munich malts with Wakatu, Motueka & Pacific Gem hops, and it is fermented with a single strain of French saison yeast

Bottle. The nose is sour milk and grass. The pour is a hazy golden brown. The taste is sour with a real nice bitterness. nice medium body and thick palette.

750 bottle. Pours cloudy dark, but bright orange with a giant white head that slowly dissapates and leaves some streaky lace behind. Smell is citrus, spiciness, alcohol, slightly funk, hint of must. Taste is soapy fruit, tad funky, citrus, floral, earthy hop bit. Lingering mild bitterness and light tart, but the floral turns a bit cologne like after a bit. That is my only complaint. Lightly dry. I still dig it.

Sample at CBC 2013. Hazy yellow colour with a small head. Aroma and flavour of malt, yeast, hops, oak and fruit.

BOLTZ7555 (3014) - Phoenix, Arizona, USA - JUN 6, 2013
Hazy honey pour with a significant ivory foam. Really odd beer. Bright lemongrass, earthy, grapefruit pith, black pepper, funky nose. Invited me in. There is a weird perfume quality accompanied by more spice than is warranted. Alcohol, cologne, acetate. Subtle but through a everything else off...just enough to be distracting. Had high hopes but this one falls flat.

There is a lot going on here. Nich grape and citrus flavored hops accent a robust saison backdrop that has a bit of extra sweetness but still very spicy and nice.

Tap @ CBC 2013. The pour’s deep gold with a tiny head. The nose is light soap, some lemon, apples, mild grapefruit citrus, orange. The taste is soapy, a bit of herbal funk, earthy farmhouse yeast. Mild bretty tang. Medium body, soft carbonation. Good.

On tap @CBC13. Hazy yellow with white head. Aroma of malt, yeast, brett, wood, grass, herbs and citrus. Flavor is malt, yeast, perfume, brett, oak, grassy, herbal hops, citrus and barnyard notes. Odd beer
