Brett/peppercorn saison

Thomas is the third installment in our “Bearded Farmer” series of saisons. In keeping with the farmhouse brewing tradition, the idea here is to brew each successive beer a little (or a lot) differently than the ones before it.

This Saison-style ale uses Pilsner & Munich malts with Wakatu, Motueka & Pacific Gem hops, and it is fermented with a single strain of French saison yeast

Sampled at Copenhagen Beer Celebration 2013 - Day 2, Session 1. Pours cloudy yellow with a fine, white froth crown. Some brett in the nose with pale, bready malts as well. Medium sweet flavor with light poo, brett, mild tropical fruits, some herbal notes. Medium bodied with fine to average carbonation. Lightly warming to finish with sweet pale malts, brett, yeast. Nice stuff.

Milky yellow pour with a white head. The aroma has some orange citrus, yeast and biscuit malt notes. The flavor is full of floral hops as well as some yeast, biscuit and oranges. Medium mouthfeel and medium carbonation.

Pour out of 750 mL bottle, hazy orange pour with thin white head, aroma brought notes of big biscuit, white fruit, hints of earth, slight earth, hints of grain. Taste is a mix of nice white fruit, grass, biscuit, slight earth, finishing slightly tart, hints of grain.

Bottle at Matt’s with friends, courtesy of Aaron. Thanks man!! Pour is hazy golden with a big white head and great lacing. Lemony, doughy, biscuity, white peppery, spicy, grassy, and lactic aroma. Taste is fresh cut grass, doughy, lemon peel, straw, husky, lightly fruity, citrusy, and vanilla with a crisp spicy finish. Medium body with crisp carbonation. Nice Saison.

Bottle @ Matt’s house. Pours a hazy orange appearance with a big cream colored head. Big spicy grapefruity, herbal spicy hoppy, grassy, bright aroma. Juicy yet dry grainy, grassy, lemon, funky bretty flavor with some passion fruit and pineapple. Çhïll beer.

(750ml bottle) Pours a cloudy maize body with medium white head. Aroma of yeast, florals, orange, grass, leather, and light pepper. Flavor of orange, brett, yeast, florals, peppercorn, and grass with a moderately dry, mildly bitter finish.

Thanks to rnorgart for the bottle. 750 ml bottle served in a Westbrook snifter. Bottled 5/8/13. A: Pours a hazy dark peach color with a thick white head forming on the pour. It recedes slowly to a thick cap and collar that leaves tons of sticky lace down the glass. S: Very light yeasty nose. Stone fruit, light peppery and some sweet malts. Juicy citrus and some sweet berry fruits as well. Light pilsner malt shows through. T: The pilsner malts really come through on the taste. Sweet and soft with a little bit of cereal graininess to them. The yeast perks up mid palate with some stone fruit and a little spiced white pepper. Light lemon citrus with just slightest bit of tartness to it. M: Light and dry with a sweet finish. Medium high carbonation. O: Not as good as BF#2 as I liked the Brett that one had, but this was still nice overall. Dry and fruity with a slight spice. Serving type: bottle 06-19-2013

750 at Markus'. Pours murky orange. Aroma is great sharp fruity orang floral hops with Saison yeast. Taste is not as good, barnyard mild floral hop. Finish is quick and pretty clean.
