COMMERCIAL DESCRIPTION
Brett/peppercorn saison

Thomas is the third installment in our “Bearded Farmer” series of saisons. In keeping with the farmhouse brewing tradition, the idea here is to brew each successive beer a little (or a lot) differently than the ones before it.

This Saison-style ale uses Pilsner & Munich malts with Wakatu, Motueka & Pacific Gem hops, and it is fermented with a single strain of French saison yeast

Bottle @ Matt’s house. Pours a hazy orange appearance with a big cream colored head. Big spicy grapefruity, herbal spicy hoppy, grassy, bright aroma. Juicy yet dry grainy, grassy, lemon, funky bretty flavor with some passion fruit and pineapple. Çhďll beer.

(750ml bottle) Pours a cloudy maize body with medium white head. Aroma of yeast, florals, orange, grass, leather, and light pepper. Flavor of orange, brett, yeast, florals, peppercorn, and grass with a moderately dry, mildly bitter finish.

Thanks to rnorgart for the bottle. 750 ml bottle served in a Westbrook snifter. Bottled 5/8/13. A: Pours a hazy dark peach color with a thick white head forming on the pour. It recedes slowly to a thick cap and collar that leaves tons of sticky lace down the glass. S: Very light yeasty nose. Stone fruit, light peppery and some sweet malts. Juicy citrus and some sweet berry fruits as well. Light pilsner malt shows through. T: The pilsner malts really come through on the taste. Sweet and soft with a little bit of cereal graininess to them. The yeast perks up mid palate with some stone fruit and a little spiced white pepper. Light lemon citrus with just slightest bit of tartness to it. M: Light and dry with a sweet finish. Medium high carbonation. O: Not as good as BF#2 as I liked the Brett that one had, but this was still nice overall. Dry and fruity with a slight spice. Serving type: bottle 06-19-2013

750 at Markus'. Pours murky orange. Aroma is great sharp fruity orang floral hops with Saison yeast. Taste is not as good, barnyard mild floral hop. Finish is quick and pretty clean.

Thanks Nate! Generous lace and head, solid retention. Tons of carb, harshly bitter yeast stings the back of my throat. Malty briefly, turns Bretty & bitter so fast. Smells great though: rich, festive yeast; citrus; juicy oranges; phenomenal. Wish it tasted better.

750 ml bottle to snifter (shared with dudeabide). Looks good for the style; a hazy orange with white head that steadily dissipates into lacing. Smells solid; yeasty, spicy, and doughy. Tastes like it smells with a lively but average mouthfeel. Solid but not spectacular.

Draught @ CBC 2013 [ Red Session ]. - Copenhagen Beer Celebration 2013, Sparta Hallen, Gunnar Nu Hansens Plads 11, 2100 Copenhagen, Denmark

Unclear medium orange yellow colour with a average, frothy, good lacing, mostly lasting, white head. Aroma is light to moderate malty, wheat, moderate to heavy yeasty, orange - citrus, leather, funky. Flavour is moderate to heavy sweet, light acidic and moderate to heavy bitter with a long duration, leather, fruity, funky. Body is medium, texture is oily, carbonation is soft. [20130504]

On tap @ Copenhagen Beer Celebration 2013. Really cloudy and glowing yellow - honey in the glass, and it has a massive really dense and lasting white top that’s leaving some lovely lacing down the sides of the glass. Light brett on the nose, grapefruit zest, some oranges, wheat and even a hint of banana. Lime zest, Smells quite nice. A bit grainy in the taste. Light oily on the palate with a average carbonation level. Lots of yeast and zest in the taste. It’s also a bit nutty bitter with citrus and tropical nuances. A bit to yeasty perhaps, but not bad at all. 04.05.2013
